Sausages can be used in many ways to give variety to menus. €y are a help when meals must be quickly prepared, for sausages are either already cooked and ready to serve, or they need only be heated, or they can be quickly cooked. To become a connoisseur of sausages is an interesting hobby. Ways of serving favorite kinds and new discoveries are provided in the growing popularity of the buffet suppers, with their cold meat Platters and of plates of hors d'oeuvres served on a variety of ocsions.

Among the favorite American sausages are fresh sausages, either In patties or as little links. These are deliciously spicy and are easily cooked. They are popular when a cooked sausage dish is wanted, and they not only are good in themselves, but they lend their appetizing flavor to foods served with them. Sausages with waffles or griddle cakes, sausages in baked squash or other vegetables, Sausages with scrambled eggs, come to mind at once in this connection. Cooked and dry sausages can be used in similar ways to lend their spiciness to other foods.

Link Sausages

Link sausages may be cooked like bacon, slowly and with frequent turning. Or they may be covered with cold water which is brought to a boil, then poured off. Sausage cakes are cooked slowly and the fat turned off as it cooks out.

Bologna in Disguise

8 slices of large bologna, cut %4 inch thick 2 eggs, beaten 1 cupful fine cracker crumbs, salted 3 tablespoons butter or other shortening Grated American cheese Minced parsley Dip the slices of bologna in beaten egg, then in cracker crumbs, then back into the egg and again into the crumbs. Fry to a golden brown in the shortening, turning carefully with a spatula. Place on a hot platter, sprinkle the tops with grated cheese and minced parsley and serve at once.

Sausage and Vegetable Loaf

11; pounds bulk pork sausage 2 eggs, slightly beaten, 1'5 cups bread crumbs 14 cup uncooked carrots 14 cup uncooked green beans l2 cup uncooked celery la cup uncooked tart apples 1 teaspoon salt Dash of red pepper 13 cup milk Mix ingredients, shape into a loaf and place in baking pan. Place In moderate oven (350 degrees F.). Bake one and a half hours. Pour Off excess fat. Garnish with green peppers and sliced tomatoes.

EAR JANE JORDAN—I am the mother of a 14-year-old girl who is in grade school. She 1s tall for her age. Wednesday she had her first date with a young man of 20. They went to the show and came right home. He is a very nice young man who treated her respectfully. I have told her the ways of life and told her that she must never meet a young man away. but that he must come to the house and get her and bring her back. Now her father does not want her to go with boys until she is 16 and then not with one so much older. I told her that the boy was too old for her but she says younger boys are too silly and too fresh. She understands things and tells me all her troubles. Her friends all go with boys. I was 17 when I had my first date and four months later I was married. I don't want that to happen to her. I want her to have a little more fun. I was never allowea to have dates. My husband is good, but we Just don't agree on this so please advise us for I don't want to do the wrong thing, ANXIOUS MOTHER. 8 5 ” u 8 n

Answer—Your husband is thinking only of the present and not of the future. All he sees is that his daughter is immature, too young to handle the problems of courtship wisely, and that a 20-year-c'd boy has six years advantage in experience. What he doesn't face is that if he keeps her isolated until she is 16, she won't be any better equipped to meet experience than she is now. Your plan is much the wiser. You have pointed out the facts and let her go ahead under your supervision. You aren't giving her unlimited freedom at all, but only a chance to take a few steps without holding your hand although you are only a short distance away, ready to help her if she stumbles. As a matter of fact, the boy is too old for her, but you've given her a chance to discover that fact for herself. You've made him accept the limitations put upon a !4-year-old girl and he knows he can't take her about as freely as a girl his own age Your daughter will develop under your plan and gain in selfassurance much more rapidly than she will under her father's plan to deprive her of experience until she is older. How can she learn to handle men and meet situations without any practice? When she is older she won't accept your suggestions as readily as she does now. A young girl wants sympathetic guidance. What she resents is the jealousy of parents which would keep her a dependent child when she is anxious to try her own strength. Suppose your husband should keep the girl out of high school for a couple of years and then plunge her into advanced work without having learned the simpler lessons in between. Would he expect her to succeed without difficulty? Yet he wants to skip all the preliminaries in courtship ahd have a daughter fully prepared for managing her own affairs with men. Tell him to use his head instead of his heart which is reluctant to relinquish its baby. JANE JORDAN.
