Life in summer needs a lot of |: spice. And cinnamon fills the bill. | Pass a tray®of fragrant hot cinnamon rolls under the unhappy face | § of a tired father, and watch the | smiles reappear quickly. { Quick Cinnamon Rolis (16 to 18 small rolls)
Two cups flour, 3 teaspoons baking powder, i2 teaspoon salt, 4 tablespoons shortening, 25 to 3% cup milk, 2 tablespoons melted butter, 12 cup brown sugar, 1 teaspoon cinnamon. Prepare muffin pans by spreading thickly with a creamy mixture made by creaming together 3 tablespoons butter and 6 tablespoons brown sugar. Sift flour, baking powder and salt tegether. Cut in shortening. Add milk, stirring only until dough holds together. Turn out on slightly floured board and knead lightly for 12 minute. Roll out to 14 inch thickness. Brush with melted butter, sprinkle with brown sugar and cinnamon. Roll jellyroll fashion and cut into 1-inch slices. Place slices eut side down in muffin pans. Bake in monerately hot oven (425 degrees F.) 20 to 25 minutes. Let stand in pan for a minute before turning out. Serve hot or cold. For another touch of warm ard | fragrant sweetness, all on a summer day, try these. Maple Muffins (6 Muffins) Two eggs, 1% cup milk, "3 cup maple syrup, % cup melted butter or other shortening, 2 cups flour, 3 teaspoons baking powder, 1. teaspoon salt, 1 tablespoon maple sugar. Beat eggs with the milk, syrup and butter. Sift the flour, baking powder and salt into the wet mixture, stirring just enough to remove the lumps—about 25 to 30 strokes. Pour into well greased glass custard cups. Sprinkle maple sugar over each muffin and bake in a modergte oven (350 degrees F.) for 25 minutes. |
