Baked Tongue Gets Right Touch With Raisins And Almonds.

By MRS. GAYNOR MADDOX Tongue speaks for itself. But | brisket of beef needs the enccuragement of sauerkraut. You'll like these high life “plain eating” reepes. They were tested in the home service department of an electric company eager to impress housewives.

Baker Tongue with Raisins and Almonds (Serves 6) One-half tongue, 1 onion, salt, 2 tablespoons flour, 4 tablespooils chicken fat, 1 cup brown sugar, 2-3 | cup vinegar or lemon juice, 5 cup water, > cup blanched almonds, 2 cup seedless raisins, 3 or 4 ginger- | snaps. Place tongue in lower case—add onion, seasoning, and cover with water. Steam three hours or until tender. Remove from water. Slice in 4 inch slices. Place in a casserole. Make a sauce by mixing fat and flour together, add sugar, then add vinegar and water slowly, stirring constantly. Cook for 10 min- | utes. remove and add blanched almonds and raisins. Pour over | tongue. Sprinkle with ginger-snap | crumbs and bake in a mcderate oven (350 degrees F.)
