pert cook applies a little kitchen magic. . Skilleted Chicken (Serves 4) One broiler (about 21: pounds), giblet broth, 2 tablespoons flour, 2 tablespoons butter, 1: teaspoon salt, ¥% teaspoon pepper, 1-3 cup cream, 2-3 cup whole milk, 1 tablespoon flour and 1 tablespoon water for paste. Have butcher cut broiler in 4 four pieces, breaking joint between drumstick and thigh without cutting through skin. Wipe chicken with damp cloth, dry, then season and dust with flour. Heat butter in large skillet, then brown chicken slightly on hoth sides. Combine in another pot about %: cup of giblet

Wipe chicken with damp cloth. Heat butter in heavy saucepan. Add onions and cook slowly for 10 minutes, stirring occasionally. Add green pepper and continue cooking for 5 minutes. Stir in tomatoes and seasoning and heat. = Add chicken. Cover tightly and cook slowly for 40 to 45 minutes, or until tender. Remove the chicken to a casserole. Turn the heat low under the saucepan and gradually add sour cream to sauce, stirring constantly. When hot and blended pour over the
