To Children|

Reputation Must Be Guarded Carefully Even By Youngsters.

By OLIVE ROBERTS BARTON There are fears that are good for a child. - While it is cruel to frighten him . with threats and fantastic stories, at the same time every child should have enough normal fear to evade certain results. He has to learn, of course, that

way, and that fire will burn him if he meddles with it. But there are other moral fears that -are just: as healthy for him to hold as physical ones One is fear of failure. We are apt

to put too high a standard at times § for the child to reach, and this is|: destructive to his happiness, but it |: is well to set a reasonable standard |: for him to achieve, and put him on |

his mettle to meet it. This is why lessons are valuable. The school child probably would slacken his efforts and let things ride at will, unless he felt the fear of others outclassing him. Another thing is his reputation. The boy or girl doesn’t live who does not wish to be well thought of by his friends. It puts them on their toes, and keeps them in line, to have to meet a daily demand for fairness and kindness. It takes more than innate nobility at times to keep up to the level of good fellowship, so it.is a better world all round, for children as well as ourselves, to be possessed of a natural dread of losing face with our friends. ‘Should the child have any fears at all in his home? Is this not one place where he can let down and not care whether he mets a standatd or not?

Respect Is Basis of ‘Home Conduct

The answer is difficult, as the . foundation of the home must be based upon love and mutual confidence and tolerance. Yet, more lax habits can be acquired in the too-

where else. The child may be jealous of his reputation with teacher and cronies, but «eel entitled to act - as he pleases with his mother. Bill may be a good boy because he loves his parents so much, but he is more than likely not to be such an angel because he knows they love him just as much, and will forgive anything he does. Bill is a boy, and human, and the chances are that if allowed, he will follow the lines of least resistance and let down at home. He has no fears. Therefore he won’t jack himself up to doing the things he ought to do. If the boy were as anxious to - please his mother as he is his teacher, or his team captain, he would feel certain fears of her. Not be afraid of her, for there is a difference. He should admire her to a point of dreading to cause her disappointment. He should be afraid of losing her faith and trust. And the boy admires more the mother who insists on his co-operation than the one who humors him too much. Let “us not call it fear, but merely a healthy respect for a pal’s opinion.

A short time ago, the American Dietetic Association got together in Richmond, Va. and tore into Southern fried chicken and spoon bread just like people who never heard of dietetics. Blanche Tansil, Woman's College of the University of North Carolina, Sally Hill of the Progressive Farmer and Janet Cameron, food and nutrition specialist for the state of Virginia, planned the banquets. And this is how it was done.

Southern Fried Chicken

(Allow at least % fryer to each serving)

Select fryers not over two pounds each. Dress carefully and cut into attractive pieces. Chill thoroughly before frying. Add salt and pepper. to flour and roll pieces of chicken in this. Then drop into deep layer of hot fat (375 degrees F.) and fry until goldén brown. Remove chicken and drain on unglazed paper. A gravy is made from part of the fat to which milk and flour are added to thicken.

Soda Buttermilk Biscuits

(4 to 6 servings) Two cvps flour, 1% teaspoon soda, 2-3 teaspoon salt, 3 tablespoons fat, buttermilk to make soft dough (approximately 3 cup). Sift flour, soda and salt together. Add fat and cut or rub it into flour. Add buttermilk to make coft dough. Knead lightly and roll 5 inch thick. Cut out and bake in hot oven (450 degrees F.) until delicately browned.

Spoon Bread (4 to 6 servings)

Three-quarter cup cornmeal, 1 teaspoon salt, 3 tablespoons butter, 1 cup boiling water, 1 cup milk, 2 teaspoons baking powder, 2 eggs, well beaten.

Mix cornmeal, salt and butter. |

Add boiling water, beating mixture until smooth. Add milk, beaten eggs and baking powder. When well mixed, turn into a greased baking dish and bake in moderate oven (350 degrees F.) for from 40 to 50 minutes. ]
