Recipes Are Offered for Brightening Sunday Dinner.

By MRS. GAYNOR MADDOX A chicken in every pot is not so Interesting as a chicken under every broiler. To say nothing of the oven. Now that broilers and fryers are the belles of the poultry world. the following different recipes will put a lot of sun in Sunday dinner.

Special Roast Chicken (6 servings) two 2!:-pound {rying chickens. Singe the chickens, wash inside and out and dry. Flace a teaspoon salt in each chicken and shake to distribute evenly. Salt the outside lightly and rub well with 3; pound of butter which has been creamed. Scrape and cut in pieces 2 large carrots. Peel and slice 2 small onions. Cut 2 stalks of celery into 2-inch pieces. Place vegetables evenly in the bottoin of a roasting pan from which rack has been removed. Add bay leaf and Si teaspoon poultry seasoning and a little water. Place the fowl on the vegetables and roast. Baste f{requently. Do not cover chickens unless they brown too rapidly. Bake from 45 minutes to 1 hour moderate oven (330 degrees F.). When

Cut each chicken wash well and dry. and then a batter made of the en eggs, tomatoes, chopped onion and parsley and seasonings. Fry in deep fat, serve with tomato sauce.

4 cups sifted flour 114 teaspoons salt 84 teaspoon soda 12 teaspoon cream of tartar 2 tablespoons Spry 2 teaspoons grated orange rind 1 cup sugar 4 egg volks, well beaten or 2 eggs and 1 egg yolk Juice of 2 oranges Water 2 teaspoons grated orange rind 14 cup sugar

\ Sift together flour, salt, soda and cream of tartar. Cream Spry, orange rind, and 1 cup of sugar until well blended. (Notice how quickly and easily Spry creams.) Add beaten egg yvoiks and mix well. Put orange juice in cup and add water to make 34 cup. Add to creamed mixture and blend. Add sifted dry ingredients and mix until smooth. With as little handling as possible, roll dough on floured board to 34-inch thickness. Let dough stand 20 minutes. Cut with 24-inch doughnut cutter. Fry in hot Spry (375° F.) until brown, turning when first crack appears. Drain on absorbent paper. Rub orange rind evenly into 14 cup sugar with finger tips. Dust doughnuts with sugar.
