Peel of 4 oranges or 3 grapefruit 1 cup sugar 1, cup water 8 whole cloves or 1 teaspoon chopped ginger root. Scrub peel thoroughly, and let | soak over night in a solution ‘consisting of 1 quart water and 1 ta-| blespoon salt. Drain, cover with | cold water and cook until the peel | is tender. The time needed for this | varies. Drain again, and remove white pulp from peel and cut into! thin strips with scissors. Make a syrup of one cup sugar to!

one-half cup water and spice. When | at the boiling point add the peel, and cook slowly until the peel is clear. Remove peel from remaining syrup and when cool roll in granulated sugar. When packing, stick in a few whole cloves. This gives a decorative note and adds greater flavor.

Add meat and egg yolks which have been forced through a sieve, Heat and stir in chopped whites of eggs and wine.
Season to taste and serve on toast rounds or in noodle ring.

By NEA Service Eggplant makes a good winter treat. It combines richly with many meats and adds considerably to many menus that are threatened with dullness.
Lamb and Eggplant

Select a firm egglant. Peel. Cut into small pieces. Mix with ground lamb shoulder. Chop onion fine and add to mixture with green pepper and seasoning. Grease casserole and fill with mixture. Make in moderate oven (350 degrees F.) for 1% hours. Stuffed Egglant 1 medium eggplant 1; cup tomato sauce 1; cup drained canned corn 14 cup minced ham 1 tablespoon butter, salt, pepper, and paprika to taste. Cut eggplant in half. salted water until tender. Then | drain and take out all insides. Chop | this pulp and mix with corn, toma- | to sauce, ham and butter and seasoning. Fill the scooped out halves and dust top with breadcrumbs. Then place upright in pan and bake in hot oven until the crumbs are browned. That's a dish. Chestnuts make another variation on the theme of winter vegetables. This is a French idea and will please any good American family.
