LIVER PROVIDES IRON NEEDED IN

BALANCED DIET

it Can Be Served in Many

Ways to Give Variety to Daily Meals.

BY RUTH CHAMBERS National Livestock and Meat Board

“Have you had your iron today?”

The need of iron in the diet is suf- | ficiently well-known to be a matter!

of comment even among those who never given any study to dietetics. It is vaguely connected in their minds with spinach and raisins and certain other foods. Too often that is all the thought they give to it until a lack of this essential food element in their diet causes an impairment of hedlth, The woman who plans meals for her family can not afford to be so negligent. It is part of her “job” to know food values, and she should keep in mind the fact that the best source of this mineral among foods

have

Serve Liver Once a Week

Iron, as you probably know, is an | important constituent of hemoglo- |

bin. the oxygen-carrying pigment of

the blood. Small amounts of copper |

are also essential to hemoglobin formation. Liver also contains copper. It is a good rule to serve liver at least once a week and this is espe- | cially important when there are| children in the family. There is a knack to cooking liver One of the most common errors in

paring should always be avoided. liver is well cooked and served in appetizing fashion it will be enjoyed by all. There are many ways In

which it may be used, and for the |

sake of variety and interest you will want to add the liver recipes which are given below to your list of family favorites, for that is just what they will prove to be. In cooking liver, it is not neces-

sary to scald or parboil it, except

when the liver is to be ground. It |

very difficult to grind raw liver, therefore it should be placed in boiling water for a few minutes before place it in the food chopper. Pork liver is richest in iron content. but all liver contains so much jron that vou may choose any Kind you prefer. Calf’s liver is preferred | by many. Lamb's liver is also used. “Her are suggestions for preparing 1g this important food:

Baked apples make an unusually attractive dessert if, before putting them into the oven, the skin of each apple is marked into sixths by lengthwise incisions. Do not cut deeply into the pulp, and see that the incisions stop within an inch of the bottom. Fill the centers with sugar, adding two or three red cinnamon candies to each apple. Bake as usual. The incisions in the skin will cause the apples to open up like
