Some are poor tasteless masses of moist bread, others are delicious delicacies with a crisp edge to the browned pact, a savory flavor of oysters, sage, chestnuts or mixed seasonings depending on your desires. \- Butter plays an important part in most of these stufings—all in fact, ‘| except sausage stuf . add just enough boiling water or broth, made of the neck and wing tips, ‘to moisten the dressing slightly. Don’t mash it together, just blend it and above all, be sure that you do not overdo the moisture. Remember that fowl of any kind has considerable mbvisture which cooks into the dressing as it bakes. COMPARISON NOTES COOKIES OF 2 KINDS
Generally speaking there are two kinds of cookies, drop and rolled. Icebox cegkies—which are mixed, chilled thorpughly, and then thinsliced and baked might be a third class, if you stickle. First cousin to the cookie is the cup cake—whose mother was a cookie, whose father was a cake! Drops are most popular because they are quicker, and (scandal!) many apartment house cooks do not own even a rolling pin. Choose your kind, but don't forget those thin old-fashioned ones, in shapes like lions, and hearts, and

running digestive system. “To be healthy, happy and wise it is only necessary to eat common, ~ sensible food,” Miss Katherine Mitchell, president of the American Dietetics Association, -told her fel: low-guardians of the nation’s stomachs. “Too much food and too much diet turn people into food faddists—which is bad.” These are reassuring words to the average housewife. There has been so much emphasis lately upon balancing meals and counting calories that getting the daily meals seemed more like bookkeeping than like cooking.
Now that common sense has been officially declared to be the best ~ guide we can go back to our tasty, well-seasoned recipes, knowing that when we please our palates we are doing the , best ‘thing for | our stomachs. '&
HERE'S SOME DON'TS
" FOR MEAL PLANNERS
‘Some of the don'ts for meal plan‘ners are these: Don’t serve rice ,and potatoes at the same meal. because both are starchy. For the . same reason don’t serve macaroni, or sphaghetti, or noodles. with rice or potatoes. Don’t serve potatoes ‘and sweet potatoes. Don’t serve two creamed dishes. In short, don’t duplicate. The essentials of a wellplanned meal are balanced food - values and variety of flavors, textures and colors.
ORANGE RIND AND ~~ SUGAR ADD FLAVOR
A mixture of two tablespoons of sugar and a teaspoon of grated orange rind, sprinkled over sugar cookies, gives cookies an unusual flavor. Another variation is to cut the dough in two-inch squares, spread with marmalade, fold and press together. By dividing the dough and flavoring it differently. you can thus
make several kinds of cookies from
a single recipe. :
