Meat Pies With Salads Are Recommended for Warm Weather Menus.
When you're planning delicious chilled food to serve on hot summer days, remember it's well to include one hot dish at every meal. With cold drinks, cold salads and desserts, a hot. dish not only is paistable but aids digestion. Morning and evenings are likely to be cool, and it's easy to arrange a piping hot dish for both for breakfast and dinner. At luncheon ~in the heat of the day—if you prefer cold foods, at least serve a hot drink. If there are children in the famfly, here is a suggestion that does wonders for appetites and digestive systems. Insist that the youngsters rest for 15 minutes before sitting down to eat lunch. It soon will become a habit and a very desirable one. New Foods on Market
July is a month of variety. New fresh vegetables and fruits appear in the markets, each with its own particular appeal. Broilers and sea foods add to the list of meats a touch of luxury without making too big a dent in the budget, for they are at their best and cheapest during July and August. Meat pies make ideal hot dishes, since vegetables can be included in the pie. This gives a hot meat, vegetable and very frequently a bread-stuff, depending on the kind of crust you put on the pie. With one of these concoctions serve a generous vegetable salad and a favorite family dessert.
Chicken Pie
One young chicken, 2 cups potato marbles, 12 tiny onions, 12 pound fresh mushrooms, 1: pound | salt pork, 2 cups cream sauce, 1 tablespoon minced parsley, 1 tablespoon chopped green pepper, 1 tablespoon minced celery leaves, 1:2 bayleaf, rich baking powder biscuit “dough for crust. Clean and disjoint chicken, cutting back and breast into two pieces. Fry in butter without browning.
Season with salt and pepper, and:
pour over about 4 tablespoons hot water, cover closely and simmer 20 minutes, adding more water if necessary to keep moist. Parboil potatoes and onions separately and saute mushrooms. Add cream sauce to chicken... When ready to bake make the crust, using 2 cups of flour. Roll the dough about 1: inch thick and line a shallow casserole with more than half of it, reserving enough for the top. Sprinkle with potato marbles, onions, mushrooms and cubes of salt pork which has been cooked over a low fire until a pale straw color. On this place the chicken in its cream sauce and sprinkle over the other seasonings. Cover with remaining dough, making several gashes through it and bake in a hot oven (400 degrees F.) for 30 to 40 minutes. Serve from casserole. ; Serve a big wooden bowl of mixed vegetable salad with the pie.

Baked Eggs With Tomato Sauce. and Brazil Nuts
One and one-half cups tomato puree, 4 eggs, 3% cup ground Brazil nuts, salt, pepper, butter. You can use condensed tomato soup or rub canned tomatoes through a coarse sieve to remove seeds. Heat puree and pour into individual baking dishes. Drop ‘an egg on hot puree. Season with salt and pepper and sprinkle outer edge with ground nut meats. Drop a bit of butter on top of each egg and bake in a hot oven (400 degrees F.) until eggs are set, about 10 minutes. Some night at dinner turn the spotlight on the, vegetables. spoons butter, 1 tablespoon flour, 2 egg yolks, 4 tablespoons grated cheese, 1 can pimientos, 1 teaspoon salt, 4 teaspoon pepper, bread crumbs. : . Cut potatoes in tiny dice. Melt butter, stir in flour and slowly add milk, and cream, stirring constantly. Season with salt and pepper and bring to the boiling point. Cook and stir five minutes. Chop pimientos and beat egg yolks. Add with grated cheese ‘0 sauce and mix thoroughly. Put a layer in a buttered baking dish and add a layer of potatoes. Continue layer for layer until all is used, making the last layer of the sauce. Sprinkle with bread crumbs and bake 15 minutes in a hot oven (425 degrees, F.). Serve from a hot baking dish.
