Add to Popularity of the Hostess.
Nothing can so quickly build up ‘reputation for the charming host#88 than mastering the art of serving delicious cold drinks on hot Summer afternoons. With some flavoring syrups on Band, one never would be at a loss When unexpected guests arrive, Lemonade, of course, is an ideal beverage, made with one ripe lemon to each tall glass. Add two or three teaspoons sugar to each glass, fill with cold water and chipped ice, garnish ‘with & sprig of mint or a finy slice of orange and serve. Try adding a dash of lemon juice or lime juice to grape juice occasionally for variety’s sake. Dilute somewhat with ice water before serving. Grape fruit juice and pineapple juice, alone or in combination, are exceptionally good with grape Juice, too.
Pineapple Juice Is Zestful
Pineapple juice, popular as. a breakfast beverage, makes a delight» fully refreshing cool drink. Try it with a scoop of ice cream. When you serve ice cream in cold drinks, add it last. A couple table- ~_ spdonsful fo each glass is enough. Less sugar is needed, because ice cream is sweet, Ginger ale and root beer are general-favorites to serve as ice cream coolers. Best of garnishes for cold drinks is a sprig of mint. If you have no mint bed, your grocer can get it for you. To keep mint cool and crisp, wrap it in a damp, clean cloth and place it near the ice. It will stay fresh for days and the cold doesn’t seem to make it lose its fragrant bouquet.
- Avoid Watery Beverages
Remember, too, that when you chill ‘a ‘beverage with ice, the ice dilutes the drink. If guests are expected, make your drink and cool on ice until wanted for serving. Then if you do drop an ice cube in it for: the sake of the tempting tinkle, there will be no danger -of serving too watery a beverage. Also remember to sip cold drinks slowly. Not only do they have a more lasting, cooling effect if taken this way, but they are much better for you. Take care not to make a summertime drink too sweet. A tart drink quenches thirst much better than 8 sweet one. ;
MAPLE CREAM
Cook maple syrup until it forms 4 ball in cold water or to 232 degrees F. Let stand until cold, Stir until’ cooked syrup hardens. Mold or turn out in flat pans and cut into squares.

Chilled Mousse of Ham Recipe to Serve 20 Persons Given.
On a warm, sultry day a coollooking mold of jellied meat or fish is one of the most pleasing surprises you can bring forth from the refrigerator! If you made it yourself, you'll enjoy it the more because several hours have elapsed between the
making and serving. These jellied meat loaves and chilled timbales and mousses are particularly delicious to serve when you are entertaining guests on the porch or in the garden instead of having your luncheon in the usual fashion in the dining room. The molds keep their shapes beautifully en route from the ice-box to the dining table. In planning menus around jellied meats, don’t repeat a jellied dish in the dessert or in the salad. Gelatin itself is a protein food with distinctive growth-promoting qualities and

more easily assimilable. Because during the summer months we often must serve a large number of persons, I give you a recipe calculated to serve twenty persons. Flank the mousse on either side with bowls of salad materials and sepve two or three kinds of salad dressings, too. This permits each person to choose his own salad combination and dressing.
Chilled Mousse
Two quarts beef broth, 4 tablespoons granulated "gelatin, 4 cups thick cream sauce, 1!2 quarts heavy cream, 2 pounds baked ham, 1 cup sherry wine, 1 teaspoon pepper, few drops tobasco sauce, truffles, halves of ripe olives, strips of green pepper and thin slices of pickled beets. Make a good strong beef broth from a well meated soup bone. Clarify. with egg white as for consomme and remove fat. Soften gelatin in cold water and stir into boiling broth. Stir until dissolved and let stand until cool and beginning to set. Make the cream sauce as usual using 4 tablespoons flour to one cup of rich milk and 4 tablespoons but= r. Line a three quart mold with a thin coating of the beef jelly. and decorate’ with the truffies and. ;vegetables cut in attractive shapes! The decorations will become firm in the
Jelly and stay put when you fill the moid. i : : Let Jell for Four Hours
Chop ham very fine and rub through a fine sieve. Put into an aluminum mixing. bowl and place in a larger pan of ice. Add cream sauce and stir "well and then add half the cream, a few tablespoonfuls at a time, stirring constantly, Whip remaining cream until firm and fold into mixture. Add jelly, sherry, pepper, tabasco and, if the ham was not salty, a little salt. However if you seasoned the cream sauce well and also the beef stock you'd better taste it before you add. salt. Pour the preparation into the prepared mold and put in the refrigerator for four hours or over night. Serve very cold. If you want to reduce the recipe use half of each ingredient to serve eight or ten. And of course you can use other meats than ham. White meat of chicken makes a delicate ard delicious: mousse. Sweetbreads are another possibility.

Motoring Stimulates Appetite
Motoring - inevitably makes one hungry: because fresh air stimulates the appetite. However, lack of exercise. makes it necessary to plan meals with care here, too. Bulky foods, coarse cereals, leafy vegetables and plenty of fruits are best. Three ‘well-balanced meals a day should be thoughfully selected. By all means eat regularly! Don’t go an hour or so past the lunch or dinner hour with the hope of finding “something better” down the road.
