PEACH DESSERT THE THING FOR SPRINGJIENUS hanker for Color in Food Easily Answered by Fruit, Gelatin. It’s spring time, the time of year when we hanker for color in our foods and gelatin desserts, which can be prepared in the morning before going out for a game of sols or bridge, are good ones to rely n right now. Using the canned peach halves as a basis, try combining them with a lemon gelatin and sliced oranges. When the gelatin starts to set pour iome into a mould and arrange the peach halves in it with the round side down. Place the orange slices in between the peach halves and cover with the remaining gelatin and chill. UnBteld onto a pretty platter and s>erve with whipped cream. If a more elaborate dessert is desired, arrange some canned peeled apricots or some Royal Anne Cherries around the ring. Individual molds are attractive and to make them select any flavor Os gelaiin desired, but remember lemon is always a good base. When ih* gelatin begins to set pour some Into each mold. Add a peach half tvith the lound side down and in the center place some canned grapes and cover with gelatin. When ready to serve unmold and garrish the plate with two prunes stufied with a mixture of cream cheese and chopped nuts. In preparing the gelatin base use the. syrup from the drained peaches and add enough water to make the required amount oi liquid. This gives an added richness to the finished product.
Sliced Strawberry Jam
' 4'A cups (2 lbs.) prepared fruit .. 7 cups (3 lbs.) sugar * % bottle fruit pectin * To prepare fruit, cut about two quarts fully ripe berries in halves lengthwise; cut large berries in quarters. Measure sugar and prepared fruit, solidly packed, into large kettles; mix well and bring to a full rolling boil over hottest fire. Stir constantly before and while boiling. Boil hard three minutes. ReJnove from fire and stir in bottled fruit pectin. Then stir and skim by turns for just five minutes to cool •lightly, to prevent floating fruit. Pour quickly. Paraffin hot jam at once. Cakes or cup cakes are just as good as their frosting. At least this is t ie opinion of Irene Hervey (above), who manages to do all manner of tricks with an excellent recipe for chocolate icing.
“It comes in handy,” said the movie actress. “Os course it can always be used for cakes and cup cakes—but try it on cookies. It makes them twice as delicious.” The actress’ recipe is not a difficult one. Here it is: CHOCOLATE FROSTING 1 square chocolate S tablespoons granulated sugar 1 tah.espoon water 1 egg Thite 8 tablespoons confectioners’ sugar 14 teaspoon vanilla Cook the chocolate, granuated sugar and water together, stirring until the mixture is smooth and glossy.
