SCREEN STARS LEAN STRONGLY TO SANDWICHES Favorite Form of Food on Hollywood Lots at Luncheon Time. Luncheon in Hollywood is frequently hurried affair. Even when time is allowed for the noonday meal many of the stars prefer to eat very lightly and hare their full meal at dinner time. Therefore there are many sandwich luncheons which take the place of a more complicated menu and at every studio lunchroom and Hollywood Case waiters are well informed as to the likes of the various players. Herbert Marshall. Paramount’s dashing male star, is one of the sandwich addicts. But he prefers a meat sandwich because he feels the need of real sustenance at noonday. His favorite combination is ham and anchovy on whole wheat bread. Thus is easily prepared. Just arid to the sliced ham a bit of onion juice, paprika, a few drops of tabasco sauce and a little anchovy paste mixed with creamed butter. Prefers C hicken Livers Sylvia Sidney’s favorite sandwich is chicken livers on plain rye bread It is made like this: To one cup of mashed chicken livers add two tablespoons of diced, crisp, fried bacon, salt, pepper, four drops of tobasco sauce, one tablespoon of lemon juice, tablespoon of sliced truffles. Spread the bread with creamed butter mixed with minced celery and add the sandwich filling. Another Paramount leading man always orders a good, appetizing sardine sandwich with a glass of cold ale, or iced tea. It is best made by draining the oil from the fish and dropping them in boiling water. Drj them, remove the skins and pound them to a paste with a little salt, pepper and lemon juice. Shrimp butter may be used with the sardines and the flavor may bq varied by the addition of Worcestershire sauce or mayonnaise. The mashed yolks of hardboiled eggs, one egg to a dozen sandwiches, and three parts of creamed butter to one of the fish mixture is very good.

Cheese for Oakie And merry, wise-cracking Jack Oakie professes a fondness for one of the tastiest sandwiches ever concocted for a hungry movie hero —hot. toasted cheese. Toast slices of bread and butter lightly, sprinkle generously with cheese and press the slices together firmly. Toast over again and serve at once with coffee. These sandwiches also are mighty tempting when made in open fashion. with the cheese piled on a single slice of bread and toasted in a shallow pan in a moderate oven. But they should always be served immediately. RHUBARB AND CRUMBS REQUIRED FOR COBBLER Sugar and Butter Other Ingredients of Oven Oessert. To 2 cups bread crumbs, use 2 cups rhubarb cut in inch pieces and arrange these in alternate layers in a buttered baking dish. Sprinkle the rhubarb layers with sugar, using a little more than half a cup and sprinkle the crumbs with melted butter, using 2 tablespoons. Most of this should be on the top layer. Bake uncovered in a moderate oven about half an hour or until the rhubarb is tender. PASTE SPEEDS COOKING Recently Perfected Product Used for Shortcake and Shells. Anew puff paste, recently placed on the market, is useful to women who haven't time to make homemade shortcakes and patty shells. The little biscuits, packed in airtight containers, can be split into as many layers as desired, covered with fruits or berries and served at a moment's notice. Covered with creamed chicken, fish or ham. they are a fine substitute for patty shells. Filets are halves of fish cut lengthwise from the bone. They may or may not have the skin removed.

MIXED GRILL CLASSED AS GALA DISH

—From Hotel New Yorker. New York. A lamb chop mixed grill. with sausages, tomatoes, mushrooms and julienne potatoes all served from a single platter is a truly gala combination.

A grand juicy, loin lamb chop, a brown little pork sausage, grilled mushroms, tomato and lamb kidney—how does that strike you for a small snack when you're hungry? Naturally, it makes a good deal more than a snack —in fact, it will do as the second or even the first course of one of your grandest company meals. Cherries are a good fruit to feature for dessert with the mixed grill. A delicious parfait is made with preserved cherries. Tiny little cakes, frosted, or chocolate brownies cut in tiny strips may accompany the parfait if it’s a party. Well made, fragrant coffee will complete a perfect late supper or informal luncheon menu for you don’t really need either salad or appetizer for these occasions. Os course, the most important part of the mixed grill is the lamb chop. Have the chops cut quite thick, not less than an inch. Trim out the fat, fit kidney in this space
