GOOD FORM AT TABLE GIVEN IN NEW BOOK Suggestions Listed Tell How to Handle Various Forms of Food. ‘ Did you wr see a person get the ‘banjo grip' on his knife and fork. w;th the handles sticking up in the air?” asks Beth Bailey McLean in her new book, 'Good Manners.” which contains 120 pages of advice on correct behavior. “When cutting food, grasp the handies firmly and naturally and hold the fork tines down,” the advice goes on. “The end of the handle should rest in the palm of your hand.” These are hit-and-miss hints from the book: If the fork is held in the English manner, tines down, when conveying food to the mouth with the left hand, do not pack food on the tines with the but use the fork as a pick. One pound of calf’s liver, onethird cup flour, one medium onion, one-third cup white wine, one-third cup thick gravy <demi-glace), two ounces butler, salt and pepper to taste.
