SALADS OFFER WAY TO GREEN COLORED FOOD St. Patrick’s Menu Also Should Include Cake With Shamrocks. Salad is something to think about while planning food for a St. Patrick's Day party when several courses should be weann' the green. A simple way to combine green against a colorful l.'-kground is by using olives on sliced oranges on cnsp lettuce. Junior members of the family would be delighted with the assignment of cutting the olives In halves, then carving them into shamrock outlines. Another attractive salad is made of ruffed peppers. Select peppers whose outlines, when sliced, will suggest shamrock leaves. Small ones are usually best. Slice off one rnd and scoop out insides. Into * eh pepper put a hard-boiled egg. Fasten it in the center with a toothpick. and around it pour flavored C iatm. When cold and firm cut in slices. Shamrock cake, made as follows. These recipes are for dishes that have helped to popularize El Gaucho, a small New York restaurant which specializes in Spanish food. They were contributed by Luigi Sabatini, who is fortunate enough to claim kinship with other famous chefs of that name. Each Is for an individual portion. Eggs Madrid Style Skin and chop a fresh tomato. Put in a fireproof earthenware ciish with a teaspoon of olive oil and iwo pats of butter. Cook over a slow flame for five minutes.
