APPLES USED FOR VARETY OFDESSERTS Recipes Given for Meringue, Floating Island and Slump. There are crisp-fleshed apples that crunch deliciously when you bite into them, and these are good to eat raw in a salad or at the end of the meal. And there are sour ones that are good for baking or for men’s favorite dessert, apple pie. These apple desserts are suggested for week-end meals: Apple Floating Island Stew apples with as little water as possible and sweeten to taste. Into two cups of cold applesauce beat the beaten whites of three eggs. Pile heaps of this beaten sauce on boiled custard in individual dishes. Make the custard by slowly pouring two cups of scalded milk over three slightly beaten egg yolks. Add a pinch of salt and a little sugar. Stir ; constantly in a double boiler until | thick. When cold add a few drops of vanilla. Apple Meringue Season two cups of sweetened I applesauce with a little nutmeg, | lemon or cinnamon. Into this beat | two beaten eggs. Pour into buttered I baking dish. Bake ten minutes. Cover with a meringue of beaten egg white, sweetened and flavored. Brown in the oven. Apple Slump Line a buttered baking dish with ‘ several inches of thinly sliced apples. ; Sprinkle with cinnamon, nutmeg, : brown sugar and melted butter. Over I this pour soft biscuit dough. Bake

WIL D RI C E USE Gl VE N Grain Suggested for Stuffing to Fill Peppers or Onions. Wild rice is good for stuffing peppers. cooked with baked onions, as stuffing for game or in soups. Wash 1 cup of rice until water comes off clean. Put into a deep saucepan with four cups boiling water, putting the rice in slowly. Shake dish occasionally, but do not stir. Boil abouFhalf an hour. Turn into a colander and put into open oven to dry.
