How to Make Light, Appetizing Digestible Pancakes

1— Have the griddle hot. 2 Grease griddle very lightly. A thin film is all you need to prevent sticking. Thick grease destroys the flavor and makes the pancakes soggy, heavy and hard to digest. 3 Don’t beat the life out of the batter. The leavening begins to act as soon as milk or water touches it. Long, excessive beating gives the leavening time to lose much of its strength. The result is heavy, tough pancakes. 4 Use a prepared flour that combines all the ingredients that should go into pancakes. Batter mixed from the bread or cake flour you have in your pantry, plus eggs and milk, can not make the best pancakes. Pancakes require not only a particular type of wheat flour but also com flour, rice flour and other ingredients you can not buy in stores. There are several good pancake flours.
