Eighty-flve per cent of all restaurant patrons eat meat, the checkup revealed, and about the same per cent eat potatoes. Half the meateaters order dessert and more than half choose apple pie. For breakfast the average citizen still holds to the tradition of ham or bacon and eggs or sausage. For lunch he likes a meat sandwich or stew, with the usual accompaniments, and for dinner he insists on a hearty portion of meat with po- | fatoes. pie and coffee as the major parts of the meal. VEAL CUTLETS FLAVORED WITH CARAWAY SEED Anchovies and Capers Also Used in Preparing Unusual Dish. Something as simple as old- 1 fashioned caraway seeds can add just the right flavor to a dish that 1 might otherwise be ordinary. In today's group of cooking directions is a simple recipe for veal cutlets, calling for a couple of ingredients | that most cooks never would think of mixing with meat. And one of these is caraway seeds. Veal Cutlet Brown one-eighth pound of butter in a frying pan. Mash a small can of anchovies and capers (about half a cup;, put this into the hot j butter and simmer for five minutes, then put in the veal cutlets, about a pound and a half. When the veal is brown on both sides sprinkle generously with caraway seeds and paprika. Put on a lid and cook for half an hour. Serve baked Idaho potatoes with it, also a mixed green salad tossed in a bowl at the table. Green Pepper Salad A hearty salad that would be sure to please the eye and delight the palate could be made from green peppers. Cut off the ends, scoop out the seeds, put a hardboiled egg in each and fill with tomato bouillon that has been thickened with gelatine. Be sure to put in enough gelatine
