PEPPER RELISH RECIPE OFFERED
Dish Looks Attractive When Served With Similar Beet Concoction. This makes a green relish which la very pretty to serve with beet relish. One dozen green peppers. 6'? cups light brown sugar, cups cider vinegar, 1 cup commercial pectin. Cut open peppers and discard seeds and white pith. Put through finest knife of food chopper twice. Drain pulp. Measure, packing solidly in cup until juice comes to top. There should be 2 cups. Mix sugar, vinegar and prepared pepper and bring quickly to the boiling point stirring constantly. Boil hard for two minutes, stirring constantly. Remove from fire and stir in pectin. Skim and stir alternately for five minutes. Pour into sterilized glasses and cover with paraflne.

Sausages and hominy are a fine dish for breakfast on a snappy winter morning. As illustrated, the little link sausages are fried until browm, then arranged in pairs about the mound of hominy in the center of a platter, garnished with parsley.

CHICKEN LIVERS AIDEDBYSAUCE Vitamin D and Appetizing Flavor Imparted by Mushrooms. For rich but not cloying taste and texture, for eye appeal that can't be resisted—and for sheer personality, chicken livers and mushroom t-auce is a rood that you should serve. The sauce—containing undiluted irradiated evaporated milk — will supply the important vitamin' D, and will be flavorsome with the mushroom liquor. The recipe follows: Vi lb. chicken liver* 1 lb. mushrooms No. 3 can sliced pineapple 3 tbsp. butter 6 tbsp. flour W tsp. salt a 2 1-3 cups mushroom liquor 1 2-3 cups irradiated evaporated milk (1 tall can) 8 slices bread Cut chicken livers in halved. Cook slowly in a tablespoon butter until tender. Drain pineapple and urown slowly in a tablespoon butter. Wash
mushrooms. Remove stems and peelings and cook in boiling water >ntil tender. Press through a sieve. There should be about two and one-third cups liquor and pulp. Cook mushroom raps in the three tablespoons butter until tender, turning occasionally. Sift flour over mushrooms. Stir to blend well. Add hot mushroom liquor. Cook until sauce begins to thicken, then add milk slowly and continue cooking about 5 minutes longer. Remove crusts from bread. Cut slices in halves, diagonally. Toast to a golden brown on one side only. Place two pieces of toast on each serving plate. Arrange slice of pineapple and two pieces of liver on toast. Top generously with creamed mushrooms.
