PROPER FOOD REQUIRED FOR SOUND TEETH Calcium and Phosphorus Most Important in Building Diet. "You mustn’t eat too much candy, Tommy! It will make your teeth decay.” That warning, formerly used to curb childish love of sweets, was not exactly truthful. Tommy was taught later that while candy might make a decayed ( tooth ache, sugar wouldn't in itself cause decay if he practiced the! "toothbrush drill'’ and made sure no candy or other food lodged be- ; tween his teeth. Cleanliness was then elevated to prime importance in the care of the teeth. But scientists have not been content to rest upon the assurance that •'a clean tooth never decays.’ They have gone on studying this question of what builds strong teeth and ; keeps them from decaying and they j are convinced now that what a child j or an adult eats does make a difference in the kind of teeth he has. j However, they have absolved candy from blame if candy isn't used to take the place of other food. Good teeth are built from minerals which the daily diet must supply. Os chief importance are calcium and phosphorus. Milk is the great source of supply of calcium, one of the reasons for

its importance in the diet of children. But the other minerals and the vitamins are also essential, especially phosphorus and vitamin D must be included. Recent reports from authorities stress the high value of meat in increasing the amount of phosphorus in the diet to prevent tooth decay. Veal is especially good as a source of phosphorus. So too is lean beef. Beef liver, lamb breast, buttermilk, ham, pork chops, skimmed milk, loin iamb chops—in this order the foods stand in the relative amount of phosphorus they contain per average serving. For vitamin D, the rays of the sun offer the most usual source, at least in summer months when most persons spend a large part of their time out door. In winter, when there is less sunshine. cod-liver oil. eggs, butter-fat. rich whole milk and liver are the foods depended on for this vitamin. It becomes evident that meat as well as milk must be included generously in the diet of the child if his teeth are to be well developed snd it is necessary, also, to continue to eat food which supplies these minerals and vitamins if the teeth are to be kept from decay throughout adult life.

(chops, here are two other ways of j serving this fine flavored meat. A recipe for lamb patties is as follows : Have lamb from the shoulder, breast or neck ground. Shape into round, flat cakes; wrap a strip of I bacon around each and fasten with i a toothpick. Season with salt and peper and dredge very lightly with flour. Fry the patties slowly in a little melted fat until nicely | browned. Lamb en brochette is prepared as I follows: 2 pound.* lamb shoulder H pound bacon square* 6 tomatoes 3 onions Salt and pepper I Have lamb shoulder boned and
cut Into Inch squares of about onehalf inch thickness. Slip a square of lamb on a skewer, a piece of bacon, then a piece of tomato, another square of bacon and so on until the skewer is pretty well filled. Broil under a hot flame for ten or fifteen minutes. Banana Cream Whip a cup of heavy cream. Stir into it a tablespoon of gelatin dissolved in a little warm water, a teaspoon of lemon juice, a pound of peeled bananas rubbed through a sieve and two tablespoons of sugar. Put into a mold or bowl and nlace in the ice box until set.
