MEAT REQUIRES CLOSE ATTENTION IN HANDLING Removal of Wrapping Advised Before Placing in Refrigerator. Remember that meat is among the perishable foods. It must be cared for properly to guard against deterioration in quality and flavor. As soon as the meat is brought into your home, unwrap it, place it on a plate and set it into the refrigerator or other cold place. If the paper is left on the meat it may absorb some of the valuable juices. Also it tends to keep the warm air against the surface of the meat for a longer time after it is placed in the refrigerator. According to experimental work done by the Bureau of Home Economics. Department of Agriculture, meat should be placed in the refrigerator in an uncovered or a loosely covered container. Lemon Souffle One of the best of desserts after a hearty meal is lemon souffle—four eggs beaten with a cup of sugar and the juice and grated rind of a lemon. Combinations Given for Preparation of Salads

Meats and Vegetables or Fruits Blend to Make Nutrition Dishes. Complementary flavors enhance each other. This fact is demonstrated time and again when meats and vegetables, or meats and fruits are combined. Meat provides the body with valuable protein for building and also minerals and vitamins, while vegetables supplement its food value and add the crispness that the appetite craves. So often the only thought when it comes to hearty salads is chicken or fish; yet there is no kind of meat from bacon to beef which can not be used in combination with vegetables to make delicious salads. Here are a few suggestions for meat and vegetables in salad combinations which are especially good. Minced ham. cottage cheese, pearl onions, minced chives, and watercress. _ First arraftge watercress on the plate; place a little mound of cottage cheese in the center and then press it down to make a cavity in the center; sprinkle with minced chives; fill the cavity with minced i ham and garnish with a few pearl onions. Crisp bacon and thinly sliced onions on a bed of shredded lettuce, i Veal or lamb combine well with ! diced celery, cucumbers and curly endive. Veal or pork may be used in any chicken salad recipe with good results. Diced tongue, ripe olives, green pepper, and lettuce served with mayonnaise to which a little grated horseradish has been added. Combine minced corn beef with finely chopped parsley and mayonnaise, place in a mound in a lettuce cup. Garnish with slices of pickled beets and halves of deviled . eggs. Cold roast beef is excellent in | Two-Fruit Garnish Cut three slices of canned pineapple in halves; cut three bananas in halves. Arrange in a shallow baking dish and sprinkle with sugar —granulated or brown. Bake in a moderate oven, 375 degrees, about ten minutes or until sugar is melted. Gelatin cubes add distinction to fruit cups; make a flavored gelatin cut in cubes when “set” and use as a garnish for fruit cups.

INFANTS THRIVE ON VEGETABLES Babies Three Months Old Given Food in New Form. pj/ Frirnrr Srr’ire WASHINGTON—A new method of feeding vegetables to babies as young as three months of age has been tested clinically by a New York physician, and it now appears that mothers may soon be having vegetable formulas for Infants as well as the old accustomed milk formulas. "Phe tests with feeding green and yellow’ vegetables successfully to seventy infants between three months of age and one year were reported to the American Dietetics Association by Dr. George W. Caldwell, New York. The method tested by Dr. Caldwell consists of homogenizing the vegetables. This process explodes particles of the food during its preparation so as to release nutritive elements and make the food easier to digest. Babies observed by Dr. Caldw’ell were fed, not merely one homogenized vegetable, such as spinach or garrots, but a combination of several containing different vitamin and mineral elements. The new method overcomes disadvantages of feeding vegetables to infants, he concluded from his observations. The babies gained normally in weight and tests of red blood cells and hemoglobin in their blood indicated that the iron and copper in the vegetables were advantageous.
