Oct. 23. 21 and 23 at Keith'*. THERE is a story to tell about the use of lard for cakes. To begin with, using lard in cakes lifts them out of the extravagant class, and we can have cakes oftener. With lard only a few cents a pound the cake cost comes down by just that much and as the Scotchman

cells us “the mickles make the muckles.” A lard cake will have just as velvety a texture, Just as sweet a flavor as one made with any other shortening. Treat lard with the same care as you treat butter. Keep it in a tightly cov;r e and container in a cold, dry

place. Like many other fats it absorbs odors easily and it breaks down when exposed to light, moisture and heat. For you who already know that fine textured, delicately flavored white as well as spice and chocolate cakes can be made with lard, and for you who are just starting to use lard as a shortening in your cakes, I have an improved method of combining the ingredients. This method has been worked out in the laboratories of the Institute of American Meat Packers at the University of Chicaeo, and if you will follow it carefully, you will produce the kind of a cake which all your friends will want to try.

Method of Mixing Cake You will notice that the method does not vary from the one you. are now using except in one step. Here it Is suggested that you use only three-fourths of the sugar to cream with the lard and salt. The other fourth of sugar is put into the whipped egg whites so that they will be more firm, like a meringue, during the process of folding them into the batter. You will find it much easier to handle the egg whites to which the sugar has been added, and the results are much better. * Sift flour once and measure: add baking powder and sift three times. Measure sugar and place threefourths of it in mixing bowl. fßeserve other one-fourth for beating into the egg whites.) Measure the lard by filling the measuring cup two-thirds full of cold water; then fill to the top with lard; pour off the water and place fat in mixing bowl with sugar. Add the salt. Measure the milk. Separate the eggs and add the yolks to the milk and stir thoroughly Measure vanilla and add to milk. Add about two tablespoons of the milk mixture to the lard and sugar j and cream until light and fluffy. | This cuts the time of creaming and makes it easier. Beat the egg whites until stiff | but not dry and add the remaining

Bake in a moderate oven at 350 degrees for about tw r enty-five to thirty minutes for a layer cake or forty-five to fifty minutes for a loaf cake. And here is a good recipe for a plain cake which you may want to add to your collection. Be sure to use the method of combining the materials which I have suggested, for your cake will be much better than if you use the conventional method. Plain Cake 1 cups cake flour 1 teaspoon salt 2'4 teaspoons baking cup milk powder 2 eggs 1 cup sugar 1 teaspoon vanilla 1-3 rup lard Mix according to the method given above, using two tablespoons of the milk to cream with threefourths of the sugar and the lard. Avery good spice cake may be made by adding one-half teaspoon cinnamon, one-fourth teaspoon cloves and one-fourth teaspoon allspice. MISS CHAMBERS TO SERVE LEAGUE

Miss Evelyn Chambers will succeed Miss Florence Kirlin as executive secretary of the Indiana League of Women Voters, according to announcement made at a board meeting Tuesday. Miss Kirlin will leave Sunday for Washington, where she will be congressional secretary of the National League. The board also decided to postpone its legislative institute scheduled for Nov. 8, until January when it will be held in conection with a visit to a session of the general assembly.
