of mashed squash in a quart of scalded milk that has been heated with an onion in it. Take out the onion, put in two tablespoons of flour that has been stirred into two tablespoons of melted butter and cooked for five I minutes in some of the milk. Season with salt and pepper. For celery soup, substitute six stalks of boiled and mashed celery for the squash. Avoid Skin on Cocoa. The “skin” which sometimes forms on top of cocoa is the albumin of the milk coagulated by heat. Care in not overheating the milk and constant stirring while the milk is heating so much to prevent this. Beating with a dover beater after the milk is added increases the smoothness of the drir.k and tends to remove the skin if the milk was allowed to scald.

ONIONS GIVEN WARM PRAISE BY SCIENTISTS Learned Men Talk Gravely About What Housewife Long Has Known. After stumbling on some information that housewives have known for centuries, scientists have an amusing and impertinent habit of pretending that the discovery is new and that it is theirs. At the International Congress for Radio-Biology in Venice, one scientist after another took the floor to tell what they knew of the curative quality of onions. The onion sends out violet rays which will heal certain ailments, the convention was solemnly told. A professor named S. D. Misra from India offered the supposedly surprising information that onions are useful in treating colds and throat troubles and cited instances where a necklace of onions had cured a cold. Women who know nothing at all about radiation of photo-electric receivers but who do know how to apply an onion poultice to a child-’s sore throat and how to prepare the odoriferous bulb into appetizing dishes may regard this as a fine send-off for the present onion harvest. Try these recipes: Stuffed Onions poil large mild onions five -minutes, cut in halves and remove some of the center rings. Make a dressing of bread crumbs, chopped ham, grated cheese, butter, salt, pepper and thyme. Stuff this into the hollows. Place in a baking dish with an inch of brown gravy or beef cubes dissolved in hot water. Bake half an hour, basting occasionally. Any chopped cooked meat may be used. Creamed Onions Boil a quart of medium white onions in salted water for five min-' utes. Drain, cover with fresh boiling water and cook until tender. Drain again and cover with hot milk containing a tablespoon each of flour and butter. Cook until creamy and thick, then transfer to a baking dish. Season with salt and peper, cover with cracker crumbs and top with grated cheese. Brown in the oven. Apple Souffle Bake eight peeled and cored tart apples, press through a sieve and let the pulp get cold. And threequarters of a cup of sugar, half a tablespoon of lemon juice and half a teaspoon of grated lemon peel. Fold in the stiffly beaten whites of four eggs and beat until very light. Turn into a buttered baking dish and bake ten minutes in a moderate oven.

AUTHORS TELL HOW TO MAKE FORTTSOUPS New Volume, Also Giving Sauce Recipes, Urges Use of Herbs. “If you take your cooking at all seriously go to your grocer or druggist and lay in a supply of basil, majoram, rosemary, thyme, fennel,! chervil, rue 1 ; tarragon, bay and laurel. Experiment with them and see how much they add to dishes which you have always considered uninteresting." This advice appears in the preface to “Soups and Sauces,” anew cook book by Virginia Elliott and Robert Howard Jones. Readers are advised to buy their herbs dry if they can nbt find them fresh. The common bouquet of herbs used in everyday cooking, another paragraph explains, should consist of two branches of parsley, a bay or laurel leaf and two branches of thyme, tied together if they are fresh or tied in a muslin bag. The book describes recipes for forty different kinds of soup, with a proper menu for each. Following are a few samples: Potato Soup Creole Peel and slice four medium potatoes and one large onion. Boil in two quarts of salted water for twenty minutes. Push through a sieve. Return the puree to the pot. Add one tablespoon butter, one-half teaspoon salt, and one-quarter teaspoon black pepper. Simmer twenty minutes. Just before serving stir in onehalf cup of sweet cream. Garnish with chopped chives.
