memories and appetites are calling for more substantial breakfasts to start off the busy days of anew season. Breakfast may be the pleasantest meal of the day. Here are some suggestions for autumn ; mornings: Serve honeydew melon, followed by bacon and scrambled eggs, with the thinnest of Melba toast and your favorite kind of jelly. Begin another breakfast with pineapple juice, then bring on ham and egg ramekins, with muffins baked at the same time. Slice peaches upon a ready prepared cereal and be generous with cream. Serve crisp bacon curls and coffee cake, and no one will complain of having to get up for that breakfast! After baked apple with cream, offer your family scrambled eggs with nicely browned little sausages. Creamed ham on toast is an enticing variation, to follow your tomato juice. For more substantial appetites, serve lamb patties or ground beef cakes with bran muffins and marmalade. Sliced oranges, and then a bacon and cheese omelet will begin almost any day in happy fashion. MEATS OFFER FOOD APPEAL AND ECONOMY - —— Less Costly Cuts Can Be Made Attractive as More Expensive. There need be no sacrifice of appetite appeal when economy cuts of meat are served. There are dishes which bring quite as much distinction to any dinner as do the more frequently chosen steaks and roasts. Here is a way, for instance, of serving ground beef which makes it a rival of planked steak. Season 2 pounds of ground beef with salt, pepper, minced onion and Worcestershire sauce; bind all together with 1 egg beaten into Vi cup of milk. Form into a thick steak and cook for fifteen minutes in a hot frying-pan. turning once during cooking. When nicely browned, remove steak carefully, to avoid breaking, to the center of a hot plank. around the edge of the plank. Arrange around the steak little cooked carrots and small white onions which have been boiled until tender and a little of the center scooped out and filled with buttered crumbs. Season all with salt, pepper and butter and put in the oven for ten or fifteen minutes until the steak ! is cooked and the potatoes are nice- ; ly browned. The clever housewife will find an ifiteresting field for experiment as she extends her repertory of meat dishes. For instance, try cooking neck slices of lamb according to this recipe. Cut neck slices 1 inch thick. Remove the bones carefully with a | small knife. Roll each slice into a round cutlet shape and hold in place with a skewer. Rub with salt and pepper. Dip the slices in beaten ! egg, then in crumbs and sear on both sides in lamb fat or meat drippings in a heavy pan. In one cup stock or thin tomato juice dissolve one lump of sugar.
