BRIDES SHOW DESIRE TO BE SAVING COQKS Economical Preparation of Food Interesting to 1934 Newlyweds. How to cook meat, vegetables, fish and soup comprises the principal concern of girls who will be brides this fall, according to registrations in the cooking school at Pratt institute, New York. Deputantes of the Junior League class and brides who for years have had tneir own pay envelopes have signed up for lessons on preparing practical meals and managing a kitchenette without the assistance of maids. ‘ This year’s brides have a far more practical attitude toward cooking than girls had five years ago.” according to Mrs. Isabelle Rackett, brides’ class instructor in the home making department. ‘‘They not only want to know how to cook good meals but every girl, regardless of her home background, wants to know how to do everything economically.” Engaged girls still like to make good biscuits, Mrs. Rackett said, also good coffee. These are recipes at which they expect to become expert before they are married: Hamburg Roll With Biscuit 1 pound round *trak. ground. 'i rll p soft bread crumbs. I teaspoon salt, teaspoon pepper. I small white onion. ’ rup rannrd tomatoes. "i rup bread flour. teaspoon baking powder. I tablespoon fat < Crisco or butter). About 1 1 cup milk. To the ground steak add bread crumbs, the egg slightly beaten, salt and pepper. Mix well, form into a long narrow roll and place in a baking pan. Slice the onion and place around the roll. Pour tomatoes over the top and bake at 450 degrees <hot oven) for twenty minutes. Meanwhile sift together the flour, baking powder and one-fourth teaspoon of salt. Cut in the fat, add milk enough to make a soft dough, roll into an oblong shape, wrap

around the hot meat loaf, return to hot oven and bake about twelve ! minutes, until the dough is golden brown. This will serve six. Halibut with Cheese Sauce. Sprinkle a one and one-fourth pound slice of halibut with salt, pepper and lemon juice on both sides. Brush over with melted butj ter. Place in a greased baking pan jin a hot oven and bake twelve minutes. Serve with cheese sauce. Cheese Sauce One tablespoon butter, one teaspoon cornstarch, one-half cup milk or cream, one-quarter teaspoon salt, one-half pound store chees cut in pieces, one-quarter teaspoon dry mustard. Melt butter in double boiler, slowly add cornstarch, milk or cream and cook two minutes. Add cheese and stir until melted. Rice Pudding One egg well beaten, one can condensed milk, one-third cup raw rice, one-half teaspoon vanilla dr lemon juice. Cook the rice twenty minutes in one and one-half cups boiling water. Drain and add egg, milk and flavoring while the rice is hot. Pour into buttered baking dish and bake in a moderate oven twenty minutes. Just before removing from oven sprinkle with dark brown sugar. Serve hot.
