TASTY DISHES SAVE WASTING OF HAM ENDS New Potatoes or Pineapple Can Be Utilized in Combinations. What to do with th* end of a ham may seem a perplexing problem But there need be no difficulty—it is good to the very l^st. A whole ham may be baited and when it is decorated with whole cloves and red maraschino cherries, it is a meat which any hostess would be proud to serve. A modern cured ham doe s not need to be soaked It is simply put on a rack in an uncovered roaster and baked in a slow oven, 300 degrees., until done. A ten to twelve-pound ham requires twenty-five minutes a pound; a larger one requires only twenty minutes a pound, and a half ham requires thirty minutes a pound Forty-five minutes before the ham is done tt is removed from the oven and the rind taken off, all except a collar around the shank bone. The fat is then cut in diagonals, s’uck with whole cloves and brown sugar sprinkled over the top. I? is returned to the oven to finish baking and brown the top The ha in is usually used “as is" as lone as the slices are regular, and ihen the remaining bits ground or chopped to combine with other foods. Ham Souffle With New Potatoes I nip n*inrH ronkH ham ft tahlnpoon* butter 3 ft tabi**ponft Hour 1 rup milk Salt and pepper Paprika Melt the butter, and add the flour, then the milk Cook until thick and season with salt, pepper and paprika Add the miner and ham, then the wpH beaten egg white. Pour into a buttered ring form, set in a pan of hot water and bake until firm. Unmold on to a platter and fill the center of ring with new potatoes which have been rolled m parsley butter. Season the sweet potatoes with butter and salt and pepper and shape into cakes the same size as the ham. Split each slice of pineapple in two to make thinner slices. Place on a slice of pineapple, the ham patty, sweet potato patty and then the other slice ot pineapple. Wrap two strips of bacon around each serving and secure with toothpicks. Place m a buttered baking dish in a moderate oven (350 degrees) long enough to cook the bacon and thoioughlv heat the ham and sweet potato. Serve while hot.
