SPINACH USED IN SOUP Cooked fireen. Chopped and Rubbed Through Sirve. Drain and chop cooked spinach and rub it through a sieve. Strain the water in which it was cooked and thicken it with a cream sauce, made by stirring two tablespoons of flour in two tablespoons of melted "butter, and cooking this ia a cup of hot milk. Stir until smooth. Put in the spinach puree, salt and pepper to season and enough hot milk to make the required liquid. CROWN ROAST OF PORK SERVES SMALL FAMILY

This delectable looking dish is just; the thing for a holiday occasion. It is especially well suited to the small family. There will be generous portions, without too much left over. Have the crown of pork prepared at the market. Place the crown, upside down in an open roasting pan. Do not cover it and do not add water. Put it in a hot oven, 500 degrees. and sear until nicely browned; then rapidly reduce the temperature to that of a slow oven, 300 degrees, and continue roasting at this temperature until done. This requires about thirty minutes a pound. In case you wish to fill the crown with a dressing, place the crown right side up in the roasting pan. Wrap the rib ends with sait pork or bacon to prevent charring, and roast as otherwise described above. When done, remove the salt pork from Ihe rib ends and replace with stuffed olives. Fill the center of the crown with potato balls, which have been rolled in chopped parsley. Serve with tomatoes cut into sections and topped with cottage cheese. Mashpd potatoes or small boiled I onions may be used to fill the center. Cinnamon apples may be substituted for the tomatoes. Cranberries may be used to top the rib ends. MAKING OF CONSOMME Clam aud Chicken Broth Used in Same Quantities. Mix equal quantities of clam and chicken broth. Clarify with egg , white and strain. Serve a spoonful; of unsweetened whipped cream on i each portion. For the clam broth, cook eight large fresh clams and their liquor in three cups of water. LIME ICE 2-3 cup sugar 1 pint water Vi cup lime juice Green food coloring 2 ttt whites 1-16 teaspoon salt Cook sugar and water slowly for ten minutes. Add to strained lime juice. Cool. Add green food coloring. Pour into freezing tray and allow to freeze firm. Remove to icecold mixing bowl and beat until smooth, then return to freezing tray and refreeze.
