COOLING DRINKS SUGGESTED FOR SUMMER DAYS Wine Steward of Hotel in New York Offers List of Recipes. Every hostess should* know these hospitable summer days how to mix an aristocratic beverage that will please any one in search of an authentic pick-me-up. Directions lor the following drinks wer contributed by Walter A. MadigaCt wine steward of the Gotham hotel. New York. Sherry Cobbler Half fill a tall glass with shaved ice, add two barspoons powered sugar i a barspoon is about half the size of a teaspoonj and two and cnehalf ounces sherry. Stir until the glass is frosted. Decorate with fruit and serve with straws. Claret Lemonade In a tall glass put the juice of half a lime and half a lemon and three barspons of powdered sugar. Add cracked ice. Decorate w'ith bits of orange, pineapple, cherries. Add two and one-half ounces claret. Serve with straws. Highland Cooler Two barspoons powdered sugar, the juice of half a lemon, two dashes bitters, two ounces Scotch, one cube of ice. Stif in a large glass and fill with ginger ale. Peppermint Flip One egg, two barspoons powdered jWgar. two ounces peppermint. Shake well with cracked ice. Strain and serve with grated nutmeg on top. Creme de Menthe Frappe Pack a small glass with finely shaved ice. Add one and one-half ounces creme de menthe and two dashes of brandy on top. Serve with thin straws. Southern Mint Julep Serve in a ten-ounce glass. Crush sprigs of fresh mint with powdered j sugar and a few drops of water. Add two and one-half ounces bourbon. Fill glass with cracked icc until well frosted. Decorate top with mint sprinkled I w-ith powdered sugar. Add three dashes of green creme de menthe over aIL Serve with straws. Gin Sling One jigger gin. one cube of ice. Pour into glass and fill with ginger ale. Gin Rickey One cube ice, juice of one lime,! one and one-half ounces gin. Fiil with carbonated water. Serve with | barspoon in glass.

GELATIN PUT TO USE Gelee Muscovite Requires Both Plain and Lemon. Dissolve half a package of unfavored gelatin in boiling water. Color it pink with vegetable coloring and favor with a little brandy. Half fill couple glasses with cutup mixed fruits. Pour this gelatin over this. Chill until firm. Dissolve half a package of lemon gelatin in boiling water and leave to cool. Whip this over ice until half firm. Fill the glasses to the top with this. Put back in the refrigerator until hard. Serve with whipped cream. Braised Beef Sear a piece of braising beef and put it in a pot with a little beef stock, boned calf feet, root vegetables and glazed onions. Cook until the meat is so tender that it can be broken with a wooden spoon. Let it get cold in its own jfiice, which will turn to jelly. Serve goblets of claret with it.

Tie or fasten with toothpicks. Brown on all sides in fat. Add a little water, cover closely and let simmer from forty-five minutes to an hour. When tender, place rolls on a platter. Make gravy from the liquid in the pan. Remove string or toothpicks before serving. Serve with asparagus tips in green pepper rings.

Strawberries Romanoff Soak ripe strawberries in the juice of oranges and curacao seasoned with a little grated chocolate. Put in the icebox to chill. When ready to serve cover with sweetened whipped cream put on through a pastry tube.
