LAMB WINS AS CROWN ROAST Mint Apples Give Touch Appealing to Eyes and Appetite. Not only should summer foods be selected with the thought that they must not be too heat-producing, but they will accomplish their purpose if they have a cool crisp appearance. Os course, all foods will not be served cold, but even a hot dish may look crisp and cool, for example, this crown roast of lamb. Lamb goes very “high hat - ’ when it is served as a crown roast and it is all dressed up for Sunday when it is accompanied by mint apples. There is rolor harmony here, and taste appeal as well, for the flavor of mint with lamb always has been well liked. To prepare mint apples, make a syrup by cooking sugar and water together. Color with green vegetable coloring, very sparingly. Flavor with a few drops of oil of peppermint. Pare and core apples and simmer in the mint syrup until tender, but not soft. Garnish with mint leaves.

Potatoes have a right to be in print these days, not only because good crops in many states have made them inexpensive, but also because they were headlined in doctors’ speeches at the convention of the American Medical Association. Most physicians, it seems are spud enthusiasts. They seem to think that we should all go on eating potatoes, and they even argued that it is right to take them with meat and gray in the good old-fashioned way. Earnest and indignant speeches were directed against modern diet experts who argue that it is not fair to a stomach to require it to digest proteins and carbohydrates —meat or fish and potatoes—at the same meal, and that persons would be healthier, more comfortable and

have more godlike figures If they didn't do this. Whichever is right, this much is true: Potatoes are served with meat at New York's smartest dinner parites. The difference between those tu- j bers and the ones we have at home is that in the haut monde they always masquerade under French names. Pommes Parisienne, pommes Imperiales, pommes Julienne or Louisianne or Chateaux or Persillees. Under any name those pommes de terre—apples of the earth—are potatoes still, and can be very good. Mrs. Marshall Field had them served Parisienne at a recent dinner party,#with guinea hen and after filet of sole. Mrs. Drexel Biddle served sweet potatoes lmperiale at a buffet supper with, roast guinea hen. Mrs. Kenneth O'Brien had pommes Noisettes. And so it goes. ! There are so many ways of fixing potatoes, even though, for one j reason or another, you are not having meat. Bake them forty minutes in a hot j oven, halve them lengthwise and scoop out the pulp, season with salt, pepper, butter, grated cheese, moisten with milk, replace in shells and bake seven minutes. Or mix with anchovies broken in small ! pieces. Slice peeled potatoes very thin and cover with cold water for ten minutes. Drain and put a layer in a well buttered baking dish. Sprin- 1
kle with salt, grated onion, pepper and flour and dot with bits of butter, Fill the dish in this way. Pour in enough hot milk to come almost to the top layer. Dot gen- 1 erouslv with butter. Bake covered for half an hour, then take off the lid for the last fifteen minutes. Peel a quart of potatoes and boil : in salted water. Dram and mash, j Beat in one cup milk, a tablespoon l of butter, the beaten yolks of two 1 eggs and a little salt and peppei. When very light and fluffy, fold in the beaten egg whites and empty into a buttered baking dish. Spoon a lew hollows in the top, put a lump of butter in each and bake j in a medium oven until brown. J Serve immediately. Sweet potatoes i are especially good cooked this way. j
