COLORFUL FOOD RECOMMENDED FORJIOT DAYS Cold Canned Soup and Salads Suggested for Menus. On sweltering days, when the family toilers are feeling a bit wilted by the time they get home, an attractive table spread with colorful refreshingly cool food is a comforting sight. From now until fall the stores will be filled with provisions from which a housewife can, with a little extra brain work, prepare inexpensive and nourishing meals at which all the dishes could be cold. These salads may suggest other cold plates to the amateur cook—such combinations as equal parts of shrimp and grapefruit with cucumber, celery and French dressing, equal parts of chicken and a combination of orange sections and halved grapes; watercress or radishes served alone or with other greens; cold meats mixed with chilled cooked vegetables and moistened with dressing. The meal might begin with hot or cold canned soup. There is a jellied chicken and tomato consomme that could give tone to the grandest meal. All the preparation it needs is to be chilled in the ice box, then scooped out of the can. Fish Salad Put cold cooked beans and cold sliced beets in a bowl and cover with French dressing for an hour. In another bowl put cold cooked fish broken in small flakes. Be sure that every bit of bone is taken out. Cooked shrimps, boiled twenty minutes in shells, broken small

mixed well with any fish and give a delicious flavor to salad. Put a mound of fish on a lettuce leaf in the center of salad plate. Surround with rings of the marinated beans and beets. Drop a dab of mayonnaise on each pile of fish, sprinkle powdered egg yolk over that, also a few dots of minced parsley. Chicken Salad Boil the chicken slowly for two or three hours and when it is cold cut the meat in small cubes. Mix two cups of the chicken meat with one cup of cut-up celery and one-half cup of pineapple cut in small pieces. Moisten with store mayonnaise to which a little cream has been added. Heap on lettuce leaves. Garnish each plate with three ripe olives. Mixed Green Salad Wash haif a bunch of watercress and let it dry. Mix with a head of lettuce broken in small pieces, also a cup of diced cfelery, a bunch of radishes and a cucumber sliced thin. Put these in a salad bowl that has been generously rubbed with garlic. Be sure that all green leaves are dry. Moisten with French dressing, mixing it into the salad lightly with two forks. Fruit Salad Pineapple and cherries, two fruits now coming in large quantities from warmer places, make an unusual salad that would be nice instead of dessert. Place pineapple rings on lettuce leaves, scatter halved cherries over this, put two tablespoons of chopped nuts in a cup of French dressing and spoon this onto the salad.

DARK WRAPPINGS FOR FOOD REDUCE SPOILAGE Investigation Provides Data on Bad Effect of Light. Rays of light at the blue end of the spectrum are responsible for much of the spoilage of foods commonly termed rancidity, reports Mayne R. Coe, a chemist in the United States department of agriculture. He arrived at this decision while following up investigations started three years ago. He showed that chlorophyll green wrappers retard the development of this kind of spoilage almost as well as does the total exclusion of light.
