FALSE DIETARY NOTIONS ABOUT FISHjXPLODED Combination With Milk Declared Harmless; Nutrition High.. Thousands of housewives are depriving their familes of a highly nutritious, easily prepared and not expensive food because of certain false notions that exist relative to fish, a home economics expert of the Booth Fisheries told a dietetics congress here. One of the most common of these notions is that fish is hard to digest. On the contrary, fish is easily digestible, according to exhaustive tests made by leading food laboratories. Fish on the whole require no longer than lamb, chicken, lean beef, bread, and places no more tax on the human digestive system than do the foods enumerated. Another fallacy to be exploded by the Booth expert was that fish and milk could not be taken at the same meal. The food authority held that while there might be certain persons with whom such a combination would not agree, there was nothing in thousands of test cases to indicate any general antagonism between these important basic foods. Yet another misconception is that tinned fish is harder to digest than fresh fish, and that small fish such as perch, bass and trout, are more easily digested than the larger variety, such as salmon, halibut, tuna and cod. Into the yolks stir a thin slice of crustless bread that has been soaked in warm milk, then fold in the beaten whites. The cooking is easier if the pan is moved into the oven under a broiler flame as soon as the bottom begins to set. When the top starts to solidify, take from the oven and cover with fried chopped mushroms. Fold it over, move to a hot platter and immediately. Broiled Tomatoes Cut tomatoes in thick slices.- Dust with salt and pepper, cover with bread crumbs, place on an oiled broiler and cook until crumbs are brown. Serve plenty of butter with them.
