TASTY DISHES t ARE CHEATED WITH STAPLES Continental Chefs Use Homely Ingredients Usually Ignored. Housewives who know almost everything about cooking, or party givers who spend theit days at business, could get useful advice from thirtfy Continental chefs who compose delicious food from the homeliest staples. Joseph. French chef-at the Caviar restaurant in New York, is author of a variety of good-looking appetizers. Besides the delectable rounds of caviar framed in hard-ccoked egg whites, he Ls proficient in tasty dabs of food made from materials that many Americans consider too ordinary for party fare. Mixture of tuna fish, smoked salmon or smoked ham demonstrate how delicious these can be if they are thoughtfully prepared. Another tidbit is celery knobs mellowed in hot oil. These recipes were contributed byAntoine Dedone of the Caviar: Wash thoroughly and boil together for five minutes one-half pound crabs, one-half pound scallops and one-half pound large shrimps. Drain and remove the shells. But one-quarter pound butter in a saucepan with one-quarter pound of chopped onions and one-half pound mushrooms. Cook until tender without browning. Stir in one-half pound of flour, one soupspoon mustard, one pint milk, one-half pint thick cream and salt and pepper to taste. Cook slowly for thirty minutes, stirring frequently until the sauce thickens. Put in the fish and a tablespoon of white wine. 5 Cook for a few minutes, then let 4thc mixture cool and spoon it into Cover with grated Parmesan Put a dot of butter on each shell mnd cook under a broiler flame for two or three minutes. If you have no shells this may be cooked in individual ramekins or in a shallow taking dish.

Scalloped Apples and Bananas Slice two bananas and two large tart apples and put in layers in a buttered baking dish, apples first. Sprinkle with two tablespoons of brown sugar.
