COLORFUL FOOD GIVES TRIBUTE TO ST, PATRICK Menu Suggested Provides Full Play for Green in Luncheon. Bt. Patrick's day offers a good excuse for a colorful luncheon or dinner party. Stove-pipe hats, clay pipes, and shamrocks are most appropriate for favors, place cards and table decorations. Os course, green will figure largely in the color scheme. The St. Patrick's day hostess will find the menu given below just right for the bridge luncheon. Fruit Cocktail Noodl* Riot with Crramtd Sweetbreads Potata Balia Parsley Batter Green Pea* Cloeerleaf Rolls Sbamrork Salad Swedish Waferi Mint Ire Cream Little Cakes Coffee Green Mints Green Jordan Almonds The most attractive service for the fruit cocktail is the double cocktail glasses. The outer glass is filled with cracked ice frozen from water that has been tinted green The inner glass contains grapefruit and cubes of pineapple garnished with green cherries. Noodle Ring The ncodie ring is made as follows: Cook three-fourths cup noodles, broken in small pieces, in rapidly boiling salted water until tender Dram. Beat three eggs until light, add one-eighth teaspoon salt, a few drops onion juice, three tablespoons grated cheese, and one-half cup rich cream. Beat slightly and add ttte noodles. Blend the ingredients with a fork and turn into a buttered ring mold. Set the mold in a pan of boiling 1 water and bake thirty-five minutes in a moderate oven, 325 degrees. Turn from the ring on to a serving platter and fill the center with creamed sweetbreads The sweetbreads are parboiled before creaming. They are combined with a rich cream sauce to which one cup of button mushrooms has been added. Shamrock Salad The shamrock salad is made by t packing well-shaped sweet green peppers with cream cheese. Chill. When ready to serve cut into thin slices and arrange three slices on ■ individual salad plates on a bed ot ! lettuce or watercress. The Swedish wafers may be pur- i chased rolled or flat. The rolled ones are very attractive tied with narrow Irish green ribbon. If rolled j wafers are not available, the flat ( ones may be steamed until soft and j then roiled. They may be put in j the oven and will become crisp again.

CHUCK STEAKS OFFER ECONOMY OPPORTUNITY

Steaks cut from the chuck are not as well known as some of the other beef steaks, but they are very satisfactory both from the standpoint of economy and flavor. The steak pictured above is called the blade bone chuck steak. It contains the continuation of the muscles found in the rib roasts. You may broil the chuck steak if you desire and, of course, there is that certain something about broiled steak which makes this the method par excellence for cooking. We must not lose sight of the fact that the steak must contain some fat and have a fat covering to get the best results in broiling, just as in roasting. Chuck steak 5 tablespoons batter 1 teaspoon salt ■i teaspoon pepper 2 caps brown sauce 1 cup sliced mushrooms Place steak or hot broiler rack, with top side snout three inches from heating element. Receipt for fried cracked wheat mush is as follows: 1 cup water and 1 cup evaporated milk, mixed 1 rup cracked wheat 4 teaspoon salt Scald milk. Add salt, then cereal, stirring constantly.. Cook un-

til cereal is thick, from three to ten minutes, stirring occasionally. Cover, and cook over boiling water until done, about thirty minutes. Pour into a deep pan which has been buttered. Cover and let set over night, in a cool place. Remove from pan, slice and fry slowly to a golden brown. Serve with apple sauce, sugar or syrup. An egg can be added to cracked wheat before setting.
