HEALTH OFTEN IMPROVED BY SMOOTH DIET Conditions Also Exist Which Are Remedied by Roughage. The physical state of a food is an important nutritional factor. Hence, both the smooth diet and the rough diet have had their advocates. As in all questions of this nature both sides have had defenders. However, there is enough accurate data available at present to point in both directions; which, when interpreted unemotionally indicates that persons fall into two general classes; those who require a comparatively rough diet and those who need a smooth diet. Roughage is supplied by such foods as bran, cabbage and whole wheat. The chief object of foods of this nature is to stimulate a sluggish colon, or lower bowel. These foods regulate the peristaltic action of the bowel, inducing both regular and complete ilhmination. However, these rough foods containing large percentages of cellulose quite often produce an undesirable colitis. This has caused some persons to turn to the smooth diet. Many fruits and vegetables may be included in the smooth diet. These foods are subjected to the process of pureeing. To puree a food it is cooked. Then it is forced through a screen of the proper mesh to convert it into a homogenous mass. This process when performed in the home kitchen is laborious. The food manufacturer has again come to the rescue of the housewife. There are on the market at the present time canned fruits and vegetablfs which have been subjected to this macerating process. These are sold under trade names of pureed, screened and sieved foods. Generally speaking, these products are of excellent quality; therefore. they provide the home table with an ever ready and easily accessible source of pureed fruits and vegetables. Shredded Carrot Salad Shred three medium size carrots very fine and mix with mayonnaise and one tablespoon of onion juice and pulp. Arrange in loose mounds on lettuce leaves and i serve very cold.

Avocado Salad Remove seed and scoop pulp from skin of one large avocado. Mash pulp thoroughly; mince fine one small white onion and one large pepper and mix with the pulp. Salt and pepper to taste and place in refrigerator to chill thoroughly. When ready to serve, shred an equal amount of lettuce, mix with the pulp and arrange on individual salad plates on lettuce leaves. Serve with French dressing.
