A lesson In geography, and this time beef geography, will be helpful to the housewife who plans all of the 1.095 meals m the year, so let's begin by dividing the map into eectlons. or countries, if you please. The location of a country on the continent determines many of its physical characteristics, and so it Is with the beef map. Some cuts contain more bone than others, some cuts are more tender than others—these factors can be determined quite accurately by the location of the different cuts. Take for instance that matter of tenderness! The sections which have a more highly developed connective tissue, and therefore need to be cooked differently than cuts from sections which have had little exercise. See, it is ail a matter of geography! Tender Sections The sections which have received j little exercise the more tender cuts, i are the ones along the back bone; 1 the loin end. from which comes the j sirloin steaks; the short loin, from | which comes the porterhouse and j club or Delmonico steaks, and the I rib, from which are cut the stand- | ing rib roasts and the rib steaks. These cuts may all be cooked by dry heat; that is, by roasting, broiling or panbroiling. These tender sections, while they are the most demanded, are by no means the only ones which make attractive dishes, so let us take a glance at the other sections on the map. Less-Tender Sections These sections, even though called; l**ss-tender, can really be made teljder if they are cooked properly. However, they need to be cooked sltfwly for a long time with moist J heat in order that the connective tiue is softened. They should be simmered, but j never boiled, as this completely dis-' solves the connective tissues and toughens the fibers. Soups, stews, pot-roasts, meat logves, and ground beef patties are ever popular ways to use these less tender cuts. Nowadays, since commercial canning processes have been perfected and all kinds of delicious vegetables are available on the grocers’ shelves, it is no problem to plan winter menus to include an adequate amount of this essential class of foods. Nevertheless, every’ home maker is on the alert for new’ ways of presenting vegetables in order to prevent her family’s interest from losing its keenness. The following recipe for lima bean croquettes may help to give zest to the menu: Two cups of cooked lima beans, 1 tablespoon minced opion, 2 tablespoons melted butter or bacon fat, cup of canned tomato, % teaspoon Worcestershire sauce, flour, egg, dried bread crumbs, salt pepper. Canned or cooked dried beans can be used. Put beans through food chopper. Melt fat or butter and brown the onion. Add beans, tomato and seasonings. Cook slowiy, stirring to prevent sticking until thick. It will take about ten minutes. Spread on a platter to cool and become firm. Form into croquetttes, roll in flour and dip in egg slightly beaten with 1 tablespoon of water. Roll in crumbs and fry in deep hot fat. The fat should be hot enough to
