needle, exactly as you would In stuffing a fowl. Almost any kind of savory stuffing Ls suitable and a particularly delicious flavor is given to the fish if it is laid over a few slices of i onion or tomato in the bottom of a well-greased baking pan. Dredge the fish with salt, pepper and flour and add one cup of boiling water. Cover and bake for the first fifteen minutes in a very hot oven. Then reduce the heat and continue baking until the fish is done. Serve with lemon and parsley. If you want to give an especially gala look to this dish serve It on a platter surrounded by: Potato Nests Cook and mash potatoes so that they are very light and fluffy. Season well with salt, pepper and butter. Add enough scalded cream or milk to make a fluffy mass. Then form the nests with a pastry tube or spatula. Place around the fish and return to the broiling oven to brown delicately. When brown, fill with canned peas heated very well with butter and a small amount of seasoned cream. Or you may serve your baked fish within a border of broiled tomato slices. Broiled Tomato Slices Slice large firm tomatoes rather thick. Place them in a well-but-tered open baking dish and sprinkle with grated cheese, salt and pepper and dot with butter. Broil until’

tender and arrange them around the fish. Broiled Shad Roe This delicacy will give a real party air to any menu. Wipe the roe, sprinkle with salt and pepper. Place on the broiler and broil fifteen minutes on one side, then turn and broil five minutes on the other side. Be sure to have the roe four inches from the flame. Serve with lemon butter made by creaming v i cup of butter and gradually adding 1 tablespoon of lemon juice. Continue creaming until well blended. Tartar Sauce Since you’ll be serving fish frequently during Lent, you’ll want a good tartar sauce to add to many • ”—e is one that is particularly delicious and easy to make: V* cap mayonnaise 1 tablespoon chopped pickles %i teaspoonful chopped parsley H teaspoon chopped parsley Vi teaspoon lemon juice Mix and chill ingredients. Cover the sole with pieces of buttered wax paper and place in a pan with fresh creamery butter, salt, a pinch of pepper, a dash of thyme, and enough white cooking wine to cover. Add 2 mushrooms, 2 shrimps and 1 large oyster for each piece of sole. Cook slowly in oven for 20 minutes. When finished remove the liquid, and make a sauce in the following way: Beat the yolks of 2 eggs slightly.
