An effective finishing touch is to pipe a border of mashed potatoes around the other vegetables and the steak. This is done by means of a pastrytube. which can be made from thin, tough paper, such as writing paper. In sheets B'j by 11- inches. Cut a sheet in two diagonally. Hold one long point of paper in each hand and wrap around to make a cornucopia with a very sharp point. The point should come in the center of the longest side. The points of the crown, protected while cooking by cubes of salt pork, may be decorated with cranberries. potatoe balls rolled in parsley. stuffed olives or paper frills. These beginning attempts in the way of simple luncheon or supper dishes, if they are not too complicated and yet are quite “special,” will be an incentive to further adventures in cooking. Scalloped Ham Here are several such tasty offerings of which a young cook may well be proud: Cut four large peeled potatoes in

thin slices. Shop one onion, a sprig j of parsley and two carrots. Butter a baking dish. Put in a layer of j potatoes, season with salt and pepper and put in some of the minced vegetables. Place over this a slice of ham cut in three or four pieces. Add another layer of potatoes, repeat seasonings and add a second layer of ham and a third layer of potatoes. Cover with milk and bake in a slow oven for 14 hours. Sausage and Cheese Toast Prick the sausages with a fork and place them in a frying pan in a moderate oven. When browned on one side, turn the sausages and brown on the other. Meanwhile, toast a slice of bread for each per*son to be served and place a very thin slice of American cheese on each slice. When the sausages are almost cooked, put the toast in the oven to melt the cheese. Remove the toast and sausages from the oven and serve the sausages on the toast. Chipped Beef and Mushrooms Place 4 pound of dried chipped beef in a pan. Pour boiling water over it and let stand for ten minutes. Drain and heat the beef in 1 tablespoon of melted butter.
Sprinkle generously with flour a/id add 1 cup of scalded cream. Stir with a fork until the mixture thickens. Serve on rounds of buttered toast with broiled mushrooms on top of each one. To prepare broiled mushrooms: Clean and peel the mushroom caps and broil from five to ten minutes, cooking the gill side first. When done, dip at once in melted butter. “Boiled" Meat is Misnomer Even thougn the term "boiled” meat often is used, in reality it is a misnomer for meat never should be boiled. It is cooked below the boiling temperature, at a simmering temperature. There is just a little movement in the water, not a full rolling boil.
