STEW IS FOOD WELL LIKED IN MANY NATIONS Regardless of Name, Dish Means Meal Simmered with Vegetables. It seems that there are stews in every land, though they bear different names and contain a variety of ingredients, according to the food supplies of each country. But whether it is called ragout, goulash; on a ‘ podrida or sukiyaki (its Japanese name*, a stew is a stew; that is, a dish made of meat or fish slrfuhered ' "in water with vegetables .and seasoning. A curious thing is that this most cosmopolitan dish Is" also intensely nationalistic. Each country has its •wn particular stew which is supposed to be made better in that land than any place else in the world. Tire difference between the stew of one nation and that of another often lies in the seasoning For Instance, the Hungarian goulash Is known by its paprika, and only the best genuine Hungarian paprika, the “sweet pepper’’ of Hungary, well cooked with the meat, will make a real goulash. This is the way it is made in its native land: I Pound b*ef I Pound veal 1 Pound fresh pork Tablespoons flour 2 Teaspoons paprika ~ 1/3 rife onions ■'l Quarts boiling water 1 rr >asponn salt 2 Teaspoons sugar 2 Carrots Wipe and cut the meat into small pieces; roll in the flour mixed with salt and paprika. Cut any fat which is on the meat into small pieces and fry with the onions until slightly brown, then add the meat and continue to brown. Add boiling water and cook slowly until the meat is very tender. Add carrots, scraped and cut into slices and cook until the carrots are tender. Add sugar, more salt if needed, and dumplings. These may be made of corn meal. English Use Beef In England the stew is made from beef, as you might expect. It is cooked with a variety of vegetables, as in this country. Sometimes it is accompanied by dumplings, sometimes potatoes take their place. There are various ways of preparing the vegetables for stew. They may be cut in small pieces or If the vegetables are small, they may be cooked whole. Carrots, onions, and small potatoes make a 'good appearance if cooked whole. In serving, the meat may be placed in the center of the platter, surrounded by dumplings, then by piles of the various vegetables, i There can be style in serving stew, as in any other dish.

Cup seedless raisins 2 Cups cider Salt Blend flour with melted butter, then add cider and cook until the sauce thickens. Add raisins; salt sparingly and serve with the ham. Forty - five minutes before the ham is done, remove from the oven and take off the rind, all except a collar around the shank bone. Cut diagonals across thd fat to form diamonds. Moisten brown sugar and flour with some of the fat drippings and rub on the ham. Stick cloves in the surface. Return to the oven to finish cooking. During xhe last ten minutes, increase the heat to brown the ham. Remove from the oven and place the cherries in the diamonds, fasening them with toothpicks. Raw cranberries may be used in place of cherries. If served cold, it may be placed in a bed of gelatin upon the platter, as in the picture.

FIVE VITAMINS TO BE OBTAINED FROMOYSTERS Popular Food Possesses Content of A, B. C, D and G. Oysters now are at the height of their season. All lovers of oysters should make the most of them while the ‘ R" months still are with us. It should be of interest to know that oysters are one of the best known sources of vitamins. They contain the five vitamins—A, B, C, D and G. Not only because of their popularity as a food, but because of their health qualities, we are giving some novel recipe suggestions: Scalloped Oysters 2 tablespoons butter 2 tablespoons flour Vt teaspoon salt % cup milk and oyster liquor Dash of white pepper Vi cup mayonnaise 1 cup buttered bread crumbs 1 pint oysters Melt butter in upper part of double boiler. Add flour and blend. Add milk and oyster liquor gradually. stirring constantly. Add seasonings. When thoroughly heated and blended, remove from fire. Slowly add mayonnaise, stirring constantly. Place a few bread crumbs in buttered casserole. Add part of the oysters and part of the cream sauce. Repeat until all the bread crumbs, oysters and cream sauce are used, having bread crumbs on top.
