Fund Hoard Meets Mrs. Harold Gauker, chairman of the dinner, was assisted by Mesdames B. S. Milligan, Royer Knode Brown, and the Misses Margaret Stilz, Elizabeth Hisey and Joan Johnson. A program furnished by the active chapter included sorority and fraternity songs sung by a quintet compo ed of Misses Jean Boyd, Betty Kallcen, Betty Price, Betty Humphreys, Lois Gerdts, a solo by Miss Barbara Oakes, and a reading by Miss Joan Clutes. A meeting of the Mu chapter foundation fund preceded the births day celebration. Board officers are: President,, Mrs. Everett M. Schofield; vice-president, Mrs. Austin V. Clifford; secretary, Miss Edith Huggins, and treasurer, Mrs. Joseph C. Matthews. BULLETIN BOA III) IN HOME SMART IDEA One hcmc-maker has originated a daily interest for herself. She has nailed up in the kitchen above her work table a two-foot square bulletin board to which she ran attach clippings with thum tacks. She cuts out bits of poetry, a pretty picture from the rotogravure section, a recipe or a household hint and posts them each day where they will catch her eye as she does -•her work. She even puts up picture postcards from friends fortunate enough to be traveling abroad this winter. The whole family take pleasure in i helping her get new and different! things for the board. One day she posted an exceptionally good composition her 11-year-old son had written for school and for which he had been praised. She found it worked wonders with the other two children, who immediately did such fine school work that they, too, could bring Mother home a Grade A paper to post. Leftovers Tasteful in Many Ways Rechauffee, Ragout, Stew and Casserole Dishes Easy to Cook. BY SISTER MARY NK \ Service Writer There are innumerable interesting and attractive ways of using leftover meats. Well-made hash is excellent and tests the skill of the cook, but there are other, less usual means of reserving the leftovers. , When cold cooked meat is served !up in some other way it is politely often called a "rechauffee.” Slices of meat are reheated in the leftover gravy, or a brown sauce is made, flavoring it as wanted. Sometimes a teaspoonful of Worcestershire or other table sauce can be used. Again, one-fourth teaspoon each of curry powder, mustard and paprika will be liked. Heat the sauce to the boiling point, add thin slices of cold meat and let stand over hot water until heated through. Serve at once. Vegetables Are Added A stew is similar to a rechauffee with the addition of vegetables. Make a stock from the bones of the roast and with this stock make a thin brown sauce. Add pieces of cold meat of any variety. For each cup of meat, add 1 cup pared and sliced potatoes, U cup each of cubed turnips and carrots, and small onion minced. Simmer until vegetables are tender. A ragout is a rich stew in which both the meat and vegetables are cubed. The brown sauce in this

Any kind of meat i is used in a ragout. 1 For a fricassee, the meat is cut in neat slicas for serving and rolled : in flour. The pieces then are sauted in butter or drippings until brown all over and are served in a brown sauce. Points of toast or split baking powder biscuits are attractive to serve with a fricassee. Combined in Casserole A casserole is made of meat and ■ vegetables combined in a brown sauce. The contents of the refrigerator well can determine the ingredients. This is baked, covered, in the oven for about an hour. Two cups meat, 3 cups mixed vegetables and 1 cup brown sauce are good proportions to use. Meat pie is a rechauffee covered with baking powder biscuit dough ! and baked in a hot oven until the crust is done. Sliced potatoes or other vegetables can be combined with the meat if wanted. Leftover meat of any kind can be 1 cut in pieces for serving and reheated in curry sauce. This is served with boiled rice. Reheat With Brown Sauce Pork or beef is very good when ; reheated in brown sauce with chili peppers, chopped ripe olives and raisins. This is put into a baking dish lined with cornmeal mush, covered with rounds of mush and baked. Veal, chicken, or any kind of fowl and pork can be reheated in sauce ala king and served on toast, in popovers or in patty cases. Croquets and timbales are another possibility for using the last crumb of leftover meat.
