in Canned Foods XTO mother questions the importance of iN vitamins —especially in the diet of children. Perhaps you have been asking about the vitamins in the foods which come in cans. If so, you’ll he interested to know that according to hundreds of vitamin studies, canned foods rank exceptionally high. There are two reasons w hy this is so. 1. After harvesting, vitamins are lost during extended storage of raw food 1:. Foods for canning are canned as soon as they are harvested —no long days of holding the raw product. 2. F.ven before vitamins were discovered, it was known that oxygen was detrimental in canning. The canncr, therefore, long ago designed equipment to exclude air. in commercial canning, the air is excluded and the food is cooked in sealed cans. This is now’ known to preserve the vitamins, and canned foods may be held for long periods and retain their vitamin content. Canning actually protects the vitamins in foods. \I hen opened, canned foods are entirely free of air, and heating for serving does not destroy the vitamins. Use canned foods freely to provide you and your children with the food value and vitamins you expect and need. You will be saving money, waste, fuel and time, as w ell.
