Scrape and slice the carrots, and cook them and the peas in just enough water to cover, adding 1 level tablespoon of granulated sugar. When nearly tender add a chopped onion and 1 generous tablespoon of butter. Add salt and pepper to taste and 1 level teaspoon of sugar. Simmer until the onion is cooked. The wonderful thing about sugar as a flavorer, recommended bv good cooks and scientists alike, is that it develops the appetizing flavors of fruits and meats as well as vegetables—in fact makes nearly every good food more palatable. During January, February and March of this year 44,870 tourists went over the battlefield in company !of guides. This is an increase of 1.435 over the same period last year.

Orange Meringue Pie One cup sugar, 1-3 cup flour, Vi teaspoon salt, grated rind of 1 orange. 1 cup orange juice, 2 tablespoons lemon juice. 2 tablespoons butter. 3 eggs. Mix sugar, flour. 1 salt and grated rind, add fruit juice and cook in double boiled 10 min- : utes, stirring until thickened. Add butter and egg yolks, beaten light, I cook 2 minutes longer. Cool and turn into baked pie shell. Cover with meringue made of beating whites of eggs until frothy, adding 5 tablespoons of sugar and U teaj spoon baking powder and beat until | stiff.
