Oyster Salad One quart oysters, 1 pint celery, 1-3 cup mayonnaise dressing, 3 tablespoons vinegar. 1 tablespoon oil, salt and pepper, 1 tablespoon lemon juice. Let oysters come to a boil in their own liquor. Skim well and drain: season with oil, pepper, salt, vinegar and lemon juice. When cold, put in ice chest for two hours. Scrape and wash whitest, tenderest parts of celery, and cut in very thin slices. Put in a bowl with a large lump of ice, and set In ice chest until serving time. When ready to serve drain celery, mix with oysters and half of dressing. Arrange in dish, pour remainder of dressing

Let cool, add enough flour (which has been prepared with the usual amount of baking powder) to make a stiff dough. Roll thin and bake quickly. MRS. ANDREW DODGE. West Division street. French Rarebit In a well-buttered baking dish, place a layer of bread crumbs, then a thin slice of cream cheese, then a layer of bread crumbs, tablespoon each of lemon and onion juice, teaspoon salt and M teaspoon pepper, then another thin slice of cheese
and top with a layer of crumbs. Pour over this cup of tomato Juice, sprinkle bits of butter over top and bake 20 minutes. MRS. MARGARET DAILY. 717 North Bancroft street. Oatmeal Biscuit Three cups boiling water, cup oatmeal, teaspoon salt. Pour water on oatmeal, add the salt and cook one hour in double boiler. While still warm add large tablespoon butter and cup sugar. When cool add one cake yeast and sufficient flour to make a soft dough. Let rise overnight. In the morning bake in gems until a golden brown. MARY LESTER BELDON, R. 4, Gosport. Ind. Casserole of Rice and Meat Steam 1 cup rice. 1 teaspoon salt, and 3 cups boiling water. Use 2 cups cold cooked meat, teaspoon salt, H teaspoon celery salt, *i< teaspoon pepper. 1 teaspoon chopped onion, 1 egg. 2 tablespoons cracker crumbs, 1 cup hot water or stock. l k teaspoon poultry seasoning. Steam the rice 20 minutes. Chop
meat very fine, add all seasonings, then the beaten egg. cracker crumbs and stock, or hot water enough to pack it easily. Line the bottom and sides of a greased mould or small bread pan one-half inch thick with the cooked rice, pack in the meat, cover closely with rice, then cover with greased paper and steam fortyfive minutes. MAKE BREW IN CELLS Sheriff Forbids Any Fruit Being Brought Into Jail. EL CENTRO, Cal., April 12.—Because prisoners were using orange peel, grapes and other fruits given them by vlstors to make home brew. Sheriff Gillet has issued an order prohibiting any fruit to be brought into the county jail. Several cells were found to contain a quantity of home brew made with alcoholic content.
