Chestnut-Orange Salad Boil large chestnuts in slightly salted water before shelling. Open one and test at the end of fifteen minutes cooking. When done, use 1 oup sliced chestnuts and allow enough oranges cut in neat smah pieces and seeds removed, to make 1 cup. Mix with tablespoon lemon juice and % cup mayonnaise to which 1 tablespooh of thick cream has been added. Chill, serve on endive leaves. Grate over the whole a very little orange rind. This salad is fine with roast duck or goose. MRS. C. W. BERRY. R. R. 3, Greencastle. Glorified _tice Wash 1 cup of rice thoroughly. Bring to the boiling point, 3 pints of water, scant teaspoonful of salt, and when the water is boiling bristly add the rice gradually. Cook until tender, then turn rice Into colandei and spray with cold water. This makes one quart of cooked rice. To this add % pt. cream whipped; 14 lb. marshmallows, cut up fine; 1 qt. pineapple, cut \p fine; 1 small cup nut meats, cut up, and sugar to taste. Put on ice and serve cold. MRS. Christmas Snowball Cook 1 cup of rice, 14 cup of 'sugar, 1 teaspoon of salt, 2 teaspoons of cinnamon and 1 quart of milk until the mixture is very thick and stiff. After five minutes’ boiling it may be cooked, covered in as double boiler. Let cool. Have ready some preserved figs. Form the rice into eight or ten balls, inserting the figs into center of ball shape. Roll in fine granulated sugar until no more sugar will adhere to them. Pile these in the center of a ring. Cream Candy Beat whites of four eggs to a stiff froth, add five tablespoonfuls cold water and flavor to taste. Stir a little, then add confectioners’ sugar until stiff enough to knead like bread. The proportion of 1 white of an egg, 114 tablespoons water or cream and 1 pound of the sugar are about correct. Mold thin in any desired form. Kneading a little improves this candy. Mexican Penuche Into a sauce pan put 4 cups of brown sugar, 1 tablespoon of butter, 1 cup of milk, and teaspoon of salt and boil until it forms a rather hard ball when dropped in cold water. Take from fire, add 2 tablespoons of vanilli and 2 cups of chopped nuts, stir for five minutes. Pt>ur on greased pan and cut in squares as soon as it begins to cool. Any nut meats are good. Honey Kisses Four tablespoons honey, 2 cups sugar, 14 cup water, 14 teaspoon baking powder, pinch salt, 1 cup nut meats, broken or chopped; 1 teaspoon organge juice, or other sweet fruit juice and 1 teaspoon flavoring extract. Boil first four ingredients together, stirring gently till a soft ball forms when a little is dropped into cold water. Remove from fire; add other ingredients; beat till thick and creamy. Sea Foam Three cups sugar, Yt cup sweet syrup, preferably maple, 2-3 cups water, M teaspoon salt, 1 cup chopped nut meats, 1 teaspoon vanilla or other flavoring and 2 egg whites, stiffly whipped. Boil sugar, water and syrup together till it will form soft ball when a little is dropped into cold water. Pour slowly over whipped egg whites, beating rapidly till all is added. Continue to beat till nearly stiff enough to hold its form, then add nut-meats and favoring. Drop a spoonful at a time on waxed paper and allow to cool. JOSEPHINE WYNANT. R. D. 9, Anderson. 114 cups citron, 6 ounces, and 2 cups chopped blanched almonds, 14 pound. Sift flour once, add soda and spices and then sift three times. Boil honey, sugar and water five minutes. Cool. Add flour mixture, eggs, fruits and nuts. Work into loaf and place in refrigerator. Let ripen two or three days. Roll on slightly floured board to 14 inch thickness. (Turn to Page 29)
