Prize Winning Recipes

Here are this week’s twenty prize recipes. They include valuable hints to the cook and housewife for each course of the meal. Send recipes to the Times Recipe Editor for daily or weekly dollar prizes. Please type them or write or print neatly and legibly.

Bean Loaf Combine one cup cooked beans (navy), one cup bread crumbs, one teaspoon salt, one tablespoon butter substitute, four tablespoons peanut butter, one cup rice water and one teaspoon seasoning. Printaniere Soup One-half cup thinly sliced carrots, one-half cup thinly sliced turnips, one-half cup chopped celery, onehalf onion (chopped), one cup diced potatoes, one teasoon salt, one quart bouillon. Place the prepared vegetables in a pan, add the butter, salt and sugar. Cover tightly and cook very gently over a slow fire, stirring occasionally. When vegetables begin to soften, add the well seasoned bouillon and finish cooking until well done. Serve hot. . MRS. JHN MEEHAN. 422 Congress Ave., City. Apricot Pudding One cup brown sugar, one-half cup butter, stewed apricots. Melt the butter and sugar; mix and cover with a layer of apricots. Pour the following batter mixture over all: Mixture of one cup flour, one teaspoon baking powder, one cup sugar, two eggs, one-half cup boiling water and pinch of salt. Frozen Fruit Cake One cup white raisins, one cup chopped pecans, one cup lady fingers, one cup macaroons, one int whipped cream, one pint boiled custard. Break lady fingers and macaroons into large crumbs. Put raisins in whole, cut nuts in quarters. Whip cream slightly and mix together with pint boiled custard. Jello-Chicken Mousse Dissolve one-half package lemon jello in one cup boiling chicken broth free from fat. Chill. When cold, beat with rotary egg beater until consistency of whipped cream. Mix one cup chopped chicken, one cup celery (finely cut), one pimento (chopped), one tablespoon vinegar, one-half teaspoon salt and bit of cayenne pepper. Add to jello mix-

Self-Iced Cookies Four eggs, two cupfuls powdered sugar, one and one-half cups flour, grated lemon peel, one-fourth teaspoonful salt. Beat eggs and add sugar gradually. Batesville, Ind., R. R. 4. Butterscotch Rolls Sift five teaspoons baking powder and one-half teaspoon salt with two cups flour. Work in two tablespoons shortening and seven-eighths cup of milk. Roll thin and spread with creamed butter and brown sugar. Roll like jelly roll and cut in inch lengths. Maple Syrup-Carmel Pie One cup maple syrup, one egg yolk, two tablespoons flour, one cup sweet milk. Cook until thick and pour in baked pie crust. Swiss Eggs One tablespoon butter, two tablespoons grated cheese, very thin slices cheese, eggs, tablespoon cream, and salt and pepper. Melt the butter in shallow baking dish; cover bottom with cheese; drop eggs over cheese; season to taste; pour cream over eggs; sprinkle grated cheese on top and bake in moderate oven. LEAH HUTCHINSON. Thorntown, Ind. Coffee Cake Cream together two cups sugar, two cups flour, four tablespoons butter. Remove one cup of mixture. To the remainder add three more cups flour, four teaspoons baking powder, one-half teaspoon salt, two cups milk and two eggs well beaten.

Date Loaf One package dates, one cup chopped nuts, two eggs, one cup sugar, two tablespoons flour, one teaspoon baking powder. Mix dry ingredients and add chopped dates, nuts and beaten egg whites. Upside Down Cake Cover a skillet with brown sugar and put pineapple slices on that with a cherry in each hole of the slices. Mix a batter of one cup sugar, two teaspoons baking powder, one-half cup butter, three eggs, one-half cup milk and two cups flour. Pour over pineapple and bake one-half hour.
