Chemists of the Stale hoard of health today are on the trail of unscrupulous merchants selling concoctions of corn cobs and brown sugar as “pure maple syrup,” according to announcement by Frank Koehne, of the pure food department. "Every spring during the maple syrup season we are flooded with complaints from people who thought , t hey were buying the good old-fash-ioned syrup, only to find that they purchased at a very high price either adulterated goods or synthetic imitation,” said Koehne. He explained that the methods of making the bogus syrup aro almost l w ithout number. Brown sugar molasses flavored with corn cobs or oak bark is the most prevalent, although granulated syrup flavored with maple extracts is common. Short Season Owing to the shortness of the season it is hard to detect all of the imitators, he said, but tbe health department asks that anyone who lias bought syrup suspected adulterated send in samples to the board for analysis. Detection of adulterants is comparl atively simple, the chemist explained. w Lead ascetate is added to the suspected syrup and the solution boiled. Ts after the mixture lias been filtered a f>eaiT-cream colored sediment forms in the bottom of tbe container it is an almost certain indication of pure maple syrup. Tell-tale Test If the sediment or filtrate is a deep brown however, he said, that is an indication that brown sugar has been added to “cut” the syrup, or that the composition is merely sugar and artificial flavoring. Sometimes there is no sediment. That is due to the syrup being made of granulated, or refined sugar and maple extract. The absence of sediment is explained, Koehne said, by the fact that in the manufacture of refined sugar lime is added to the raw, or "brown” sugar to remove the color. Although the health department
