Housewives Advised to Be Sure to See if Fowl Has Plenty of Flesh on Breast, Back and Hips—Examine It With Its Back Up—How to Cook It Told. By Dorothy Stephenson Back in the New England days the Pilgrim shoulder-armed his musket, went oiit into the woods and banged away at the fattest turkey he came across. And he was assured a good Thanksgiving Day dinner.
Today the modern housewife obtains her turkey at the butcher shop. She has to take the word of the butcher that the fowl is plump and sweet, unless she knows herself And most housewives don’t. Consequently Uncle Sam has come to her rescue. Speaking through the Agricultural Department, Uncle Sam advises housewives to be sure and ascertain the amount and quality of flesh on the body, especially on the breast, back and hips. Experts say to examine the bird with its back up, as this is the best way to tell how plump it Is. To insure a moist, tender turkey, there must be plenty of meat and a generous amount of flesh. To tell a turkey’s age, feel the end of the breast or keel bone and examine the spurs on its feet. Young birds are usually the choice for roasting, but almost any bird can be cooked so that it will be tender. Uncle Sam, as the chef, says to place the turkey in a covered roaster with a little water in the bottom. A carefully .regulated oven will keep it from drying out. The time of cooking varies with the age of the turkey. The turkey in Indianapolis will be as popular this year, but city market offlcials say that the demand for ducks and geese is becoming greater. They predict the turkey will become the favorite fowl for the Christmas dinner table. • * * G. 0. P. J. Robison, former president of the Womans Department club, as submitted by Mrs. Grace Julian Clarke as as follows: The recent death of Mrs. E. J. Robison meant a real loss to a wide and varied circle. Mrs. Robison touched life at many points, and always helpfully and effectively. Her activities as a teacher and molder of youth contributed to her success as a home-maker, and these experiences were reflected in her club and church life, as well as in her later connection with war work and the interest growing out of it. After the consolidation of the two older club organizations into our present Indiana Federation. Mrs. Robison was appointed vice president of the Seventh dis trict, an office corresponding to the present district chairmanship, serving during the season of 1907-1908 j On the organization of the district | the following year she was elected secretary and was a tireless worker during that early formative period.
