PUDDING WITH CHOCOLATE SAUCE Soak enough stale bread in water Ito make two cupfuls. When soft, hress all water out of bread and mash very fine. To one-half cup sugar add two cups milk, three eggs well beaten, a pinch of salt, a teaspoon of baking powder. Mix all together. Flavor to suit taste. Ilake in a deep pudding dish. Sauce: Two tablespoons cocoa ,one cup of sugar, one tablespoon flour, one and onehalf cups boiling water, a lump of butter size of egg. Mix sugar, cocoa and flour; then add butter and hot water and boil for three minutes. Mrs. Alice Galt, 6144 Cornell Ave., Indianapolis, Ind, PEACH ICE CREAM One can peaches, one-fourth teaspoon'salt, one cup milk, one teaspoon lemon juice, one-half cup sugar, two eggs well beaten, one cup whipped cream. Rub enough peaches / through a sieve to make two cups and i'mmediately add the lemon juice to them. Make a custard by adding the scalded milk to the beaten eggs which have been mixed with the sugar. Boil until slightly thick, but not curdled. When cool, add the peaches and whipped cream. Freeze as usual and serve with a half peach on top of each portion. This makes one quart of cream. Mrs. Hazel De Rolt, Osgood, Ind. PLAIN RELISH Chop fine one head of cabbage Bnd sprinkle with salt. Dot stand *thus for twelve hours. Then mix one onion, finely minced, with *the cabbage. Drain through a colander and add one tablespoon of celery seed and pepper to taste. Put in a jar and cover with vinegar. Ready for use in three days. Mrs. C. G. Minniek, 248 S. Gray St., Indianapolis. ANGELS DELIGHT Two and three-fourths cups flour, two cups granulated sugar, three heaping teaspoons baking powder. Sift all together seven times. Pour over this two cups whole sweet milk scalding hot. Beat h'ard for five minutes. Fold in the stiffly beaten whites of five eggs. Flavor with lemon and vanilla. APPLE FLOAT One quart cooked cold apples, whites of three eggs, two-thirds cup sugar and nutmeg to suit taste. Strain apples through wire strainer. SOUR CREAM CUP CAKES One cup granulated sugar, two eggs, one cup sour cream, one and tree-fourths cups flour, one-eighth aspoon of soda, two teaspoons baking powder, one teaspoon vanilla or lemon extract, one-half teaspoon nutmeg. Sift flour, soda, baking powder and nutmeg together before adding to the above mixture. Put in gem pans and bake in moderate oven. Ice with your favorite icing. Mrs. M. L. To one-half pound confectioner’s sugar add two teaspoon of vanilla and sufficient heavy cream to make an icing just thin enough to cover cake. spoons shortening, one yeast cake softened in one-fourth cup of lukewarm, water, one-third cup nuts or raisins (or both) chopped fine, three and one-half cups flour and one egg. Add salt, sugar and fat to scalded milk. When lukewarm add yeast, and flour; mix well, and let rise over night. When l(ght add egg and beat well. Let rise again. Divide the dough into two parts. BAKED HAM WITH MACARONI Boil a small ham until tender; then remove meat and chop. At the same time cook one-half cup macaroni in salted water. When tender, drain and add a cup of chopped ham, one tablespoon of chopped onion, one fourth cup grated cheese, and salt and pepper to taste. Mix Well, turn into buttered baking dish and bake onehalf hour. Bertha Danner, R. R. t, Elwood, Ind. v RAISIN PUDDING Two large or three small slices of break broken into small pieces, two eggs well beaten, one cup granulated sugar, one cup cooked resins, one tablespoon butter, one teaspoon cinnamon, one pint sweet milk. Mix thoroughly and bake in a buttered pan. Dressing for above: One cup sugar, one tablespoon flour, one tai blespoon butter, one-half pint boiling water. RHUBARBADB Wash and cut three pounds of rhubarb in small pieces, i(gp.ce in a granite saucepan, barely cover with boiling water and cook until tender. Drain this through a colander and add the strained Juice of six lemons, twelve oranges, three grapefruit and one cup of grape juice. Measure juice and add onethird its weight in sugar. Bring juice and sugar to boiling point, cool and bottle. Keep in the refrigerator and reduce with water at serving time. This will serve fifteen persons. Regina Meyer, 1634 S. (If beans are soaked over night in warm water they will cook more quickly.) When beans are tender remove from fire and put into baking dish and add one small bottle of catsup, four, level tablespoons of brown sugar,! one small onion diced end salt and pepper to taste.
