CHERRY CAKE One cup brown sugar, one-half cup butter, three eggs, one-fourth cup hot water in which one teaspoon of soda has been dissolved, one teaspoon baking powder, one teaspoon cinnamon, a pinch of nutmeg, one cup of strained cherries. Cream and butter, add three well-beaten eggs, the hot water and soda and the dry ingredients which have been sifted thoroughly together. Beat well anck, rake in layers. Cover with caramel Icing. Washington St., Indianapolis, ind. “NUT” COOKIES One cup shortening, two cups sugar, two eggs, four tablespoons sour milk in which one teaspoon of soda has been dissolved, two and one-half cups rolled oats, two and one-half cups flour. sifted with one teaspoon cinnamon. SACCHARIN PICKLES Add to one gallon of vinegar one cup salt, one cup ground mustard seed and a small piece of alum powdered, one level teaspoon of saccharin, one-half cup mixed spices and about one cup of horseradish cut in pieces. Mix all ingredients in jar cold. Wash pickles and drop into the vinegar mixture. Weight these down with a cover, but do not, seal. CREAM OF CAL’LJFIjOWEE SOUP Cook one small cauliflower until tender and press through a~ sieve. Melt one-fourth cup butter. Cook it in one-fourth cup flour, then add the cauliflower and broth and boil. Add one quart of milk, in which one small onion has been cooked. Add salt and pepper to taste. Two cups milk, three egg yolks, one-fourth cup of sugar, one-fourth teaspoon of salt, one-half teaspoon of vanilla, three egg whites, seven tablespoons of brown sugar, onefourth cup broken nut meats, six Maraschino cherries. Make a custard by scalding the milk and stirring it gradually intq the egg yolks which have been slightly beaten with the sugar. Cook in double boiler until it thickens, stirring con-

stantly. Cool and add the salt and vanilla. The islands to go on top of this custard are made by beating the whites until stiff then adding three tablespoons of brown sugar; beat again, and add the rest of sugar, beat once more and add the nut meats. Drop by spoonsful on the custard. Place in a glass “bowl. Halve the cherries and use them for decorating the islands. Irene Barrett, R. R. C, Box 80 B, Indianapolis. CHAUDFROID CHICKEN Boil one disjointed chicken in water to barely cover and add onehalf teaspoon of poultry seasoning, one onion stuck with three cloves, four stalks of chopped celery and one-half bay leaf. Add a rounding teaspoon of salt after it has cooked one hour. Let chicken eool In water in which it has cooked, then take out and remove the skin. To make the sauce, put two tablespoons of butter in a saucepan, and when it bubbles add two tablespoons of flour; blend well and stir in gradually two cups of strained chicken stock and the beaten yolks of two eggs. Continue to stir until thick and smooth, and add one-half ounce of gelatine (which has been softened in one cup of cream.) Remove from Are as soon as the gelatine is dissolved and set aside. Cool and when quite thick, dip each piece of chicken in the sauce and set In the ice chest until set. Serve on a bed of cress and garnish with sliced, stuffed eggs, olive and capers. PINEAPPLE SHERBET Combine Six cups canned cream and six cups boiling water, add three cups sugar and a few grains of salt. Let cool, then put in ice box to chill. Then freeze very slowly. When about half frozen add the juice of six lemons and the grated rinds of two. Add also one can of shredded pineapple. Continue freez* ing until solid. Then pack in ice until ready to serve. Bread Omelet One cup of bread crumbs, soaked in milk, yolks of four eggs, beaten up with same. Whites of four eggs beaten to a stiff froth and stirred into first mixture. Melt a piece of butter the size of an egg in a frying pan and turn in the broad and egg mixture, let it become of a Jellied consistency, then turn one-half over the other with a cake turner. GRAND JURY TQ GET ME SOON Hall-Mills Prosecutor Expects Indictments. Bu United Preen SOMERVILLE, N. J., Aug. 27. The Hall-Mills case will go before a grand jury In three weeks. Alexander Simpson, special prosecutor, said today he is confident his evidence will warrant Indictment of Mrs. Frances Stevens Hall, widow of the slain clergyman; Willie Stevens, her brother, and her cousin, Henry De La Bruyere Carpender, the Wall Street broker, for the murder of the Rev. Edward W. Hall and Mrs. Eleanor R. Mills.' Simpson said he Probably would present the case to the regular session of the Somerset County grand jury on Sept. 21. Supreme Court Justice Parker, who Thursday refused to admit Stevens and Carpender to bail, is returning to Maine for his interrupted vacation, but will be back in about ten days.
