Mayonnaise to moisten. Cucumbers may be used in place of celery if desired. Toss ingredients lightly together with a fork. Have four large onions fried brown In another skillet. ' Spread some onion over each piece of liver. Make a gravy in the skillet in which liver was fried by adding one large tablespoon of flour to the grease. Put in enough milk to make a good gravy. APPLE ROYAL Take as many apples as desired. Core and divide into four parts. Set four parts, skin outward and upward, into individual baking dish. Add ' one tablespoon of water and bake in moderate oven until tender. Remove and pack over apple cold cooked rice which has been mixed with this sauce: (Enough for one) one-half teaspoon butter, two tablespoons of sugar, four tablespoons of water and one-half teaspoon of cinnamon. CREAM CAKE One-third cup butter, one cup sugar, two eggs, one-half cup milk, one and one-half cups flour, two and one-half teaspoons of baking powder. Cream butter ar.d add sugar gradually; then the eggs well beaten. Sift the flour and baking powder together, and add alternately with milk. Flavor as desired. Amy E. Cream one egg yolk, onethird cup suga'r, a teaspoon of butter, a pinch of salt and one tablespoon of flour and one teaspoon of
cornstarch. Stir a cup of hailfc slowly into it and cook until It thickens, stirring constantly. Put- a little of cream mixture into bottom of crust and then the strawberries, which have been cleaned and sweetened; add rest of the cream, then the stiffly beaten whites of eggs, to which a tablespoon of sugar has been added. MARQNISE iSALAD , Three firm tomatoes, one-half cup chopped onion, one-half cup chopped parsely, two tablespoons salad oil. Peel tomatoes and cut in half. Mix onion and parsely, add oil; let stand two hours before using. When ready to serve line salad bowl with lettuce, placing tomatoes In it and on each half put one tablespoon of onion and parsely mixture. Pour French dressing over them. CINNAMON STARS One pound almonds washed, dried and grated with skins, one pound sifted powdered sugar, six egg whites and one teaspoon of cinnamon. Stir the beaten whites of eggs with sugar and cinnamon for twenty minutes and set one-third of the mixture aside for icing. Into the remainder stir the grated almonds. MUSTARD PICKLE One quart each of chopped cabbage, onion, green tomatoes, green beans, cucumbers and green peppers (or less peppers unless the sweet mangoes are used). Put all in salt water over night. Scald in the same water the next morning. Drain. Have ready six cups boiling vinegar. Stir in the following paste: three cups of sugar, one cup flour, three or four tablespoons of ground yellow mustard seed. Mix with cold vinegar to make a smooth paste and add one of tumeric.
