BEST EVER SALAD One cup diced boiled potatoes, onehalf head of lettuce, one cup diced celery, one onion chopped, one cup cooked peas. Dressing: One cup bacon cut fine and fried a crisp brown, two tablespoons sugar, onehalf teaspoon mustard, ono-half cup vinegar diluted to taste. Bring to boiling point. FRUIT AND NUT PUDDING One pound English walnuts, onehalf pound dates cut up, two cups granulated sugar, six eggs, whites and yolks beaten separately, two tablespoonfuls of cracker crumbs, two teaspoons of baking powder. POTATO SOUP Pare nine medium sized potatoes, quarter and boll until done. Drain off the water and mash and beat until white and creamy. Season with salt and pepper and stir In one and one-half pints of whole milk. Return to the fire an heat after adding one tablespoon of butter. Serve with crackers or buttered toast.

BANANA BREAD One cup sugar, one-half cup shortening creamed together, four tablespoons sour milk, one-half teaspoon soda dissolve in milk, a pinch of salt, three bananas crushed to a pulp, add to the above ingredients. BAKED HALIBUT, GREEK STYLE Place one and one-half pounds of halibut In r baking dish. Add six medium sized onions, four large mangoes and five stalks of celery chopped fine. One small bottle of catsup, five tablespoons of olive oil (or melted butter), one quart water. Season with salt, pepper and a dash of paprika. Bake until mangoes and onions are tender. Wash prunes and soak In cold water. Cook In same water until soft. Remove stones, cut prunes into quarters and mix with lemon juico and sugar. Line the pie plate with crust, put in the prunes and one and one-half tablespoons of prune juice. Dot with butter and dredge with flour. Add an upper crust and bake In a moderate oven. BAKED RAM YVITH APPLES Put in a roaster or deep skillet a slice of ham two Inches thick and trim off all fat. Put a layer of raisins on ham and one and onehalf cups of sugar on raisins. STRAWBERRY SHORTCAKE Select one quart strawberries, crush and add enough sugar to make plenty of juice. Make a shortcake dough as follows: Two cups sifted flour, four level teaspoons baking powder, one-half teaspoon salt, one-third cup butter, one cup milk, two tablespoons sugar. Combine all dry materials and sift. Rub in the butter with the finger tips, add milk gradually and roll out on floured hoard. Bake in sheets onehalf inch thick. Split and butter while hot. Southern Cabbage One small head of cabbage shredded fine, one cup water, one heaping tablespoon butter, one level tablespoon bacon grease, one tablespoon sugar, one teaspoon salt, one teaspoon old-fashioned black pepper. Put water, butter and grease Into covered kettle on stove; when at boiling point, put in cabbagge. After cooking fast fifteeen minutes, add sugar, salt and pepper. CHICKEN AND MACARONI Boil a chicken until very tender, take out all the bones and pick the meat into small pieces. Boil half a pound of macaroni until tender, first breaking it into pieces an Inch long. Butter a deep pudding dish, put on the bottom a layer of cooked macaroni, then a layer of minced chifcken, hits of butter, salt and pepper, then some of the chicken over this.
